4 packets to a full package of cream cheese? I don't think you used enough. Truvia doesn't sweeten as well as Splenda. I always use more. Did you add vanilla? If I were you I would let them thaw, add more sweetener and vanilla if you left that out and refreeze. I think they should be o.k. The other option would be to sprinkle the tops with more Truvia before you eat them. Actually, that's what I would do first is try sprinkling some more sweetener on one and eat it and see if you like it better. Honestly, I think you just didn't use enough sweet.

I just made a batch with low fat cream cheese and.....low fat cottage cheese blended up to get rid of the lumps. I have them in the freezer right now. Hey, fewer calories and extra protein. How bad can that be?? (EDIT: How bad can that be?? Very, very bad! Blugh! Nasty. Kids, do not attempt this at home. Bad idea. Bad. Bad. Very, very bad. Back to the drawing board...)

I looked for whipped low fat cream cheese but only found full fat. I bought a little tub and will play with that with my next batch. Not sure how the numbers will come out with full fat. I might try just freezing them without butter and see how they come out. I might just sprinkle with Erythritol on top and see what happens. I'm thinking not much good is going to come of this part of the experiment but Ill try anything once.

i'll try sprinkling it on top first but for that amount approx how many packs of truvia do you think? i did add vanilla - a couple of good splashes.

I would have doubled that at least. I used a heaping 1/8 cup erythritol and some stevia liquid in mine.

What you might want to do is powder a packet of Truvia in the blender then roll one of the clouds in it and see how that goes. Sort of like powdered sugar. If you don't powder it first the graininess might be problematic for you. Do one and see what you think. The vanilla's in there so that's good. I think you just need more sweetener.

These sound delicious. My 13 y.o. wants to try low carbing but I don't think she can completely give up chocolate. These would be perfect if she didn't hate cream cheese. I like the idea of whipping cottage cheese. Maybe mixing 1/2 cream cheese and 1/2 cottage cheese with the cocoa, chocolate DaVincis and the butter would work? Has anyone found a way to use less cream cheese?

So today was a big fail. You cannot freeze little blobs of sweetened low fat cream cheese and think you will then be able to bite into them because they turn into little blobs of concrete. I'm lucky I didn't break a tooth.

The cottage cheese/low fat cream cheese is just disgusting. Also VERY hard and grainy. The texture is quite inferior to the original recipe. Uh, no. Do not go there.

I did mix low fat cream cheese with some table cream and since it was too liquid to form into blobs I put it into a silicone cupcake mold and froze then into little muffin sized cheesecakey-little things. VERY good. I am going to make these in popscicle molds next time. Used 6 oz cream cheese to 1/4 table creme plus the usual sweetener and vanilla. For those unfamiliar with Table Creme this is a Mexican/Hispanic product of cream with added thickeners (guar gum and carrageenen)

I just can't think of anything else to try to add volume to replace the butter. I suppose you could use one of the transfat-free spreads but i'm not sure I really want to go there. I think for now I'll stick with the original recipe using low fat cream cheese.

i thawed and remixed them with 4 more packets and caved and added a splash of davincis vanilla - i'm not home to taste them frozen but unfrozen it was runny but i think tasted good. i didn't get mounds really - more thin - but i think i will like that better than biting into something thick.

i sure hope i'm not reacting to splenda because i sure like my davinicis.

I would only make these one or two at a time. If I made an entire batch I would eat them in one sitting.

Ah probably the cream deflated in thawing and then the added liquid made them liquidy. Oh well, at least they tasted good. I still have some Davinci's around the house that I use every now and again. I use 95% stevia and erythritol so I figure a little bit of Splenda won't kill me. Hope not anyway.

I'm happy you at least ended up with something tasty.

I made these, and I did not like them at all!! They look pretty, like little clouds but yuck! My DB loved them, so they didn't go to waste. I used 1/4tsp sweetzfree and some pure vanilla extract in mine. Just not my thing I guess. Glad you guys like them

I would suggest trying the mint choco chip ones bc they are THAT good. I tried the orange creamsicle and, even though I love that flavor, they didn't even remotely compare! They are still in the freezer weeks later while mint choco chip ones barely last 3 days. :blush:

I would agree with the last posts that they really don't taste like cheesecakes. They do have a cream cheese flavor though and they really help with getting the fat you need for Atkins. I have made french vanilla ones and mint choc chip and I love them all!

finally tried them again today - MUCH better!!!! they are flat because of the freeze thaw thing but i don't mind. i can still taste a bit of a funny taste after but not bad at all!

I think your best bet would be to work on something related but different. Certainly, if you do/will/can eat raw eggwhites, beating one of those into your mixture would lighten the fat and calories.

Could also try some oat fiber, at zero carb and calorie. Not sure how it would work, would have to fiddle with the recipe.

You could also do something with gelatin, letting the mixture chill till thick, whipping it, dropping the clouds and freezing. It would be tricky to get them just thick enough to work with, but it could be done.

I bet DaVinci's with gelatin and some light cream cheese could make some fantastic clouds.

NOTE: I mean dropping the butter entirely with these options.

I made these several weeks ago - yummy! But honestly, I just can't have stuff like this around and stay on target. It's just too tempting! My super skinny DH helped me polish them off - I won't make them again for a while.

yes, I think the recipe needs to be cut WAY down so it makes just a few, unless you know other people will eat them all right away and remove temptation.

I made a batch of these today and used the pre-melted unsweetened chocolate and mint extract. Had to taste to make sure I used enough liquid splenda and YUMMMMMMMMM!!!

I bet they are good! When I want something, I put a tablespoon of cream cheese in a small measuring cup - add 1 packet of Equal - stir and eat! Taste like cheese cake filling......love

These things are to die for. They are sooooo good. Even the non low carbers that ate them loved them. I make them right by the recipe and keep them in the freezer. My granddaughter is crazy about them.
