Easy Chia Tapioca
This is so much like the real thing!

1/4 cup half and half
1/2 cup water
1tsp vanilla extract
sweetener equal to 3T sugar (I used 4 drops ez sweetz)
1/2 tsp cinnamon (If you like cinnamon in yours)
3T chia seeds

Mix everything in a container with a lid. Give a shake. Refrigerate and shake after 10 minutes to keep the seeds from clumping.
After about an hour the seeds are soft and it's thick like tapioca:)

Whole recipe is: 279 cals; 21g carbs; 17g fiber.
Makes 2-3 servings.

Hmm! This may finally cause me to get some chia seeds - never really saw anything else that made me think, gee, I NEEEED those, but I do love me some tapioca!

Oooh! Thank you!!! I've been looking for something like this to eat before my workouts in the morning.....all I could think of was tapioca and how could I make something similar! I'll have to go get some chia seeds but I think I have everything else to make it for tomorrow morning...and the store that sells the seeds is on the way to town and I just happen to be going to town tonight! Yay!

I ordered the white chia from netrition. I don't know if there's a taste difference (like brown and golden flax) but these are good!:)

I made a HUGE bowl of this the other day........I ended up freezing half- Hopefully it will come out like an Edy's frozen fruit bar- coconut....In mine I added Coconut DaVinci- coconut extract and used coconut milk.....It was awesome!

I've had both the white and the black seeds....I like the white because it looks better, but if I remember it's more expensive.

I had to come back in and say this was absolutely perfect for my pre-workout snack! I ate half before I went to the gym and the rest when I got back....

I made mine with So Delicious Unsweetened Coconut Milk instead of half and half and I added a tiny bit of vanilla extract, left out the cinnamon on this morning's batch. I made it with cinnamon last night...yum! But I wanted more bland for this morning so it wouldn't bother me while I exercise.

It doesn't look real appetizing with the dark seeds but that doesn't bother me...

I bought some black ones locally..They weren't cheap..$20.00 for a quart size container.
I did what it said on the package and drank them..Then I mixed some in my Italian salad dressing and marinated tomatoes, onion, and broccoli..very good..

I am waiting for my white ones from netrition..

Hi all…
Sipping a strawberry/yogurt smoothie with chia...

Used a 5:1 mix of chia/water (1/3 cup chia seed in a 2 cup mason jar)

4-5 strawberries
1/2 chia gel
1/2 cup yogurt
6 drops liquid splenda
4-5 ice cubes

Vita-mixed till ice crushed and blended


Next up:

Chocolate ''Faux-Tapioca''
1/2 cup Chia Seeds
3 cups Chocolate Almond Milk (Unsweetened)
Sweeten to taste
Stir and refrigerate

To serve:
Top with either chopped toasted almonds or unsweetened coconut

I was never a huge tapioca fan (it wasn't something I grew up with, and never really got used to), but this sounds interesting, especially since I have Chia seeds.
And the coconut one sounds interesting, (again) especially since I just opened a can of coconut milk (this can is more like coconut cream) yesterday afternoon.
Hmmmmm,,,, think I'm off to put some together.

I have the brown seeds, I've never thought the white would be THAT much better for the difference in price. Yes, SugarPop the white are more expensive (anywhere I've seen them). Some say they are a little more nutritious, but I'm not sure on that. I tend to think they are just "prettier".

I've switched over to white seeds because yes, they are prettier. I notice no other difference than that but for me that's enough.:p

Billie, The places I researched online said the chia black and white chia seeds were nutritionally equal. I also read that bugs don't like chia seeds, so they are all organic. Don't spend extra for organic. I bought a bunch at $6 a pound. They don't go bad.

I tried this with chia seeds I've had for about a year (bought a 5 lb bag). They never did absorb the cream/water mixture. Do chia seeds dry up after a certain time and can't absorb moisture? Any other time I've not had this problem. I can't seem to make the tapioca pudding.:dunno:

I wonder if you need more liquid in your pudding. The only time the chia seeds have not gotten jelly-like for me is when there is not enough moisture for them to soften. Mine are older than 1 year.

Soobee, the thing is, they haven't sucked up the moisture that is in the container. The liquid is on top and they are on the bottom. I even left them overnight in the fridge and they still haven't taken in the liquid.

How strange Linda. I hope they don't go bad like that as I just bought 10 lbs of them. I eat a lot of them but I'd be unhappy to see them just sitting there when I want my pudding, lol.:annoyed:

Dottie I hope you don't mind if I include the recipe I used amongst your thread.
I do intend to try your recipe as well.....The recipe below made WAY too much pudding- I would cut in 1/4 to get a human sized portion. The sweeteners I used were a combo of erythritol, xylitol, and coconut flavored DaVinci as well as coconut extract.

Faux tapioca - 2 cups of water, 5 scoops of low carb whey protein powder, stir together & add cup of chia seeds, after they have started to absorb the water, add in 2 cans of coconut milk & artificial sweetener if you like and mix it all in. Can be eaten after an hour but will be better tomorrow. Cream a pkg. of cream cheese into a can of pumpkin and add to the faux tapioca for an even more nutritious pumpkin pie pudding.

The above was a recipe I found in the organic section of this board..I can't remember the name of the person who posted this recipe.

Just curious - how did you initially attempt to integrate/incorporate them with the liquid?

I suppose there is a life expectancy with Chia Seeds - most foods do have one.

Hi Larry,
First I mixed all the ingredients except the chia, then threw in the chia seeds and then shook the container good and put it in the fridge and followed the shaking directions. I also took them out this afternoon and put them on the stove in a little pot for a slow simmer for about 10 min and they finally gelled. Hubby said they were good, but who knows? I didn't eat them since I don't care for cinammon, but made it for him.
I also put about a T. of chia into a bowl w/ tap water and let them sit out this afternoon. They also have not jelled, so think I'd be better off throwing them out and buying new, although I guess I could still use them if I got them good and hot like I did with the simmer.

Hmmm,,,,, Linda, I can't imagine why they wouldn't gel, except they do need to be stirred fairly often. I always stir mine (not shake). They also as someone else said, do need enough water. I think warm water does sometimes work best. But I used some coconut milk (more like coconut cream) & HWcream last night. Mine started to gel some right away. But I added quite a bit more water to mine. (Should have added a bit more cream too, and less water, as the flavor was a little thin.) I stirred mine several times. If you don't stir enough they will just clog all together, and not actually gel throughout.
I've read that they will keep almost indefinitely, so I don't think them being a year old should matter. I think mine may be. I've forgotten when I bought them. I buy mine in about 2 # bags, and now usually buy several of those at a time. And the poster above said hers were over a year old.

Would like to try to think and expound more, but I gotta run.

Oh, o.k. Now I see and I agree with Crazy. Mine will do that if I don't stir enough during the first few minutes. I keep the container out and stir every few minutes for probably 10 minutes. If I don't do this I seem to get a layer of chia at the bottom and liquid at the top just as described. I can usually break that up and they will go on to absorb but it's all lumpy and I can't de-lump it once it goes that far. Just stir more in the very beginning and they should be fine.
