If you are a huge fan of tapioca then this will probably take a bit of getting used to. I've been playing with chia pudding for about a year now but couldn't quite get it right. I hope you will keep trying. I think you need to forget the idea of tapioca pudding and look to making something that is very good and a bit sweet and fun...but not really tapioca KWIM? I wasn't a real fan of this stuff either at first but after a year of on and off I am eating this daily now and really enjoying it. Tapioca is not a part of my life any longer and this isn't tapioca but it's good and it makes me pretty happy so I am glad to have something yummy I can have as a part of my new post-tapioca life.

Definitely try cutting down on the seeds and playing around with different liquids/combinations. Make it your own (and then share your recipe with us!)

I used cream and water and increased the cream to half a cup, lowered the chia (real chia this time ) to 2.5 T. instead of 3 and added about a t. of cocoa. It really turned out good. A little extra sweetener for the cocoa of course.

Minnas - OK, I'll get the 'tapioca mindset' out of my head, cut down on the seeds, play around with the ingredients and keep trying. Thanks for explaining!

Haven't used chia in about 18 months, read this thread and had to buy some white chia.
Loved the tapioca.

I used to keep it gelled in fridge in water, now I gel it in unsweetened almond milk, vanilla and sweetener. Great for protein shakes or to eat right out of the jar when "just looking for SOMETHING" I also used it to add to strawberries and a little heavy cream and mixed in my Nunja.

I added some (don't laugh) to a cup of coffee with HC. Now I have coffee pudding.

I keep some gelled in water in the fridge for 'normal' use, but there is always a pint mason jar of Chia gelled with Unsweet Chocolate Almond Milk for shakes.

What's your method for adding the seed to protein shakes? Do you blend it up, add it at the end and let stand, add to the liquid part first, need specifics!

I had heard about making a tapioca pudding with the chia seeds and lo and behold, here is the recipe. I can't wait to try it. I have black on hand and keep a small pint jar of gel in refrig for shakes or adding to yogurt. I like Larry's idea of the chocolate unsweetened almond milk.

Just for the sake of clarity - I actually build the pudding from scratch putting seeds directly into the unsweet Choc Almond milk.

That way there is a more 'choc' flavor in play. If I felt I wanted/needed it more chocolate, I’d just add some cocoa powder to the milk and blend it in before adding seeds.

Thanks for the recipe Dottie!

I've been enjoying this for the past two days.
I had been adding the seeds to my smoothie, but this is much better. Makes me think I'm eating something sinfully full of carbs.

I start with the Almond milk at room temp and if it doesn't get thick enough for you, then up the amount of seeds to liquid.

Hi Esther…
The white are the same taste-or-texture wise, and I prefer the black.

The white actually are a bit harder to work with as far as building gels since they like to clump more easily. So I have to be far more attentive and vigorous (shaking the jar) immediately upon mixing the seed and liquid to prevent lumping.

I've made a chocolate "pudding" with the almond milk (and sometimes a combo of almond & coconut milk - the kind in a carton) and the Glucomannan, then added chia gel, and I really liked that better than I did just the almond milk (chocolate) & chia seeds. (added cocoa & sweeteners)

Just wanted to post my little tweak for different flavors:

3T chia seeds
1/4c heavy whipping cream
1/4c davinci (I like coconut flavors, but I'd say try anything )
1/4c water

mix all together and shake often in the first hour, then refridgerate...

I've also added about 1T of unsweetened cocoa powder (the seeds help make sure it gets well mixed) and a little extra sweetner if needed, for a oddly light/fluffy chocolate pudding

Yum! I can't wait to try this! I found some white Chia Seeds for a very good price at Marshalls but haven't known what to do with them. This recipe sounds perfect!
