I am so glad it was a hit, Diana! We make that cheesecake all the time for events and special occasions and the kids really like it. We even took it on our last rv trip as a treat/Birthday cake.

Just a heads up: A scraper in India took my old site, so if you click on any of my old "cleochatra blogspot" links they're going to a fake site. My new site is in my signature line and all of my recipes are there. I am working to settle this with google right now.

I do not use xylitol due to the fact I have two dogs. I have E and isomalt (which do not affect them!) - think I can just sub the isomalt for xylitol? I always powder it because it is weird little pearls.

I am not a big fan of E but as long as there is no cooling or recrystalization I can handle it!!

You will need to add 1/4c more sweetening power if using the isomalt. Isomalt is only about 40% as sweet as sugar. It will add the bulk of the Xylitol, but not the sweetening power.

ladeeda-- I don't typically use flax; this carrot cake was one exception. It's worth it if you can use it.
