Walnut or Almond Roco Squares (Photo inside)



WALNUT OR ALMOND ROCO SQUARES
Very yummy! Your family and friends will love these.

Snack Crackers (1 g carb ea.),
OR my http://www.lowcarbfriends.com/bbs/lo...ond-thins.html (0.4 g carb ea.)
1 1/4 cups chopped walnuts or slivered almonds (300 mL)
1/2 cup butter, melted (unsalted if crackers are salted) (125 mL)
1 tbsp whipping cream (15 mL)
1/2 cup SPLENDA® Granular, (125 mL) OR
Half and half Splenda packet equiv. (I add a couple extra) and powdered erythritol (nice!)
1 cup sugarless chocolate chips, (250 mL)
OR from 70% Lindt chocolate bar

Line a greased cookie sheet with crackers. Sprinkle walnuts or almonds over crackers.

In blender, combine cooled, melted butter, whipping cream, SPLENDA® Granular and erythritol, in that order; blend. Pour over crackers.

Bake in 350°F (180°C) oven 8 minutes. Remove and sprinkle with chocolate chips. Place in oven another 2 minutes. Gently, draw tines of fork through molten chocolate in order to spread it (this is the “glue” for the walnuts on the crackers, so do it carefully, letting a bit of molten chocolate touch each walnut or almond).

It’s difficult to figure out the exact number of carbs due to all the variables, however, they will be between 2 and 3 g carbs each.

The lc version of the crack candy that is posted in the PG!!

I don't have the powdered erythritol, but I do have it in crystal form

Can I put the crystals in the food procesor to get powdered?

Netrition is out of the powdered and trying to find an alternative using something I already have

Almond Roca is my mom's favorite candy. She's also a LC'er but she never makes LC treats (but she loves them). I'm going to make a batch of this for her (and keep a few for DH and I ), thanks Jennifer!

Gee, I hope this recipe is up to snuff. You guys probably remember the high carb version only too well. I have never made the high carb version. A friend gave me her high carb recipe for Almond Roca bars and I adapted it years ago.

I like this recipe and I have noticed that non low-carbers like it a lot too, so here's hoping, Angie and Beeb, that your expectations are met.

I'm sure it will be wonderful Jennifer, as are all your recipes! I haven't had Almond Roca in many years - I think it's just the buttery, almond, chocolate combo that's great together. If it even slightly resembles the HC version, my mom will be thrilled!

OK, I made the crackers last night and then did a recipe that is very similar to Jennifer's on this thread. I halved her cracker recipe and my cracker toffee recipe to see how they would turn out! I'M VERY PLEASED AND EXCITED!!

The crackers are a TRUE winner and I am SO happy to have my cracker toffee bars again!

Here is a picture of mine, sorry of picture quality, need a new camera. Also, only 3 on the plate, but I made 2 dozen, put the rest AWAY so I won't eat them before Easter Sunday!

It is almost exactly like your recipe here but this is what I do. It is a De-Carbed version of one I have always made and without your crackers it would not have been possible! Thanks again, Jennifer Also wish I had your eye for presentations, my friend! My look sad compared to yours!

Cracker Toffee Bars

1 cup butter
1/2 cup sweetener (used ideal and powdered erythritol)
12 oz chocolate chips (I chopped up a bag of Hersey Miniatures, SF chocolate bars)
Chopped nuts of choice, enough to cover top of toffee bars. I use walnuts but any nuts will work

Melt butter and sweetener together on top of stove until sweetener is truly incorporated into the butter.

Line a cookie sheet with foil, fill the cookie sheet with crackers in a single layer. (this use to be a sleeve of Club Crackers, but I used your crackers instead).

Pour butter/sweetener mix on top and bake in a 350 F oven for 10 to 12 minutes or until golden brown. Do not over cook or it will burn.

Take out of oven, sprinkle chocolate on top and let it melt from the heat of the cooked cracker/butter mixture. When chocolate is melted spread the melted chocolate around on the crackers with a spatula, then sprinkle on the nuts.

Let cool, cut into squares and keep in a tin or covered container in fridge.

Yes, that's it! I noticed the original recipe called for a lot more butter. I used to use 3/4 cup butter and then found I could even reduce it more to 1/2cup. That's about 5 oz more chocolate than I used - Yum!! I'm such a chocolate fan!

Your method sounds a bit easier and less fiddly than mine. What on earth is ideal sweetener? I've never heard of that. Where do you purchase it? Thx.

Here is the info on Ideal. I only use it with other sweeteners. I found that splenda makes me crave so I needed a different sweetener for my tea. I found this in my local Shop Rite store. Have seen it other places, too.

It's a blend of Xylitol, dextrose, maltodextrin and a very small amount of sucralose for added sweeteness.

I just made a batch of these, holy smokes they are so purty! The batch is cooling now, but when they are cool I'll take a picture. Thanks so much for this recipe Jennifer! My mom is going to love you!

I did these a bit differently. I made Jennifer's crackers (I didn't use oat flour and they turned out well). I made Lauren's carmel sauce with xylitol and a 1/2 TBS coconut sugar (not the type you get in the Asian market, it's granulated and looks a bit like Rapadura sugar). And I also used Lauren's milk chocolate chunks (just because I don't do well with certain sweeteners like malitol or splenda).

Can't wait to try one! Thanks again Jennifer!

Hi Angie, good to hear the crackers work well without the oat flour.

You used a different topping (more of a sticky one?) - mine is very buttery, plus I also butter the pan, so there is usually no difficulty removing the crackers. They are very rich even with only 1/2 cup butter. The original recipe called for 1 cup butter. Calories!!

Yours look quite different to mine, but sounds like a good recipe too. Maybe just grease the pan really well next time.

Gosh, Angie, you went to a lot of trouble to make these though. Yikes! I'm sure your mom will be grateful though.

It's a very easy, quick recipe if one already has the crackers and the chocolate and nuts handy.

I did use a totally different topping, there was no butter but a 1/4 cup heavy cream instead. It was like caramel. I went that route because I was actually out of butter! I think they would have come out of the pan easier if I would have let them setup a bit longer, but buttering the pan would have been a good idea (only I didn't have any! ).

I pretty much totally changed up the recipe, I'll have to try your version next time. I had made a batch of crackers earlier in the week so the recipe was a snap to finish off.
