I thought I got this recipe off Linda Sue's website, but I just checked her site and it's not there. So I don't know where it came from, but it's the best one I've tried. Hope you like it.
1 10 oz package frozen chopped spinach, thawed
1 cup chopped mushrooms
½ cup chopped onion
2 Tbsp. Butter
2 Tbsp. heavy cream
2 Tbsp cream cheese
2 Tbsp mayonnaise
1 tsp. Thicken/Thin not starch
Salt and pepper
2 slices bacon, cooked and crumbled
Sauté onion in butter until translucent in a medium skillet. Add mushrooms and sauté until both onions and mushrooms are soft and cooked.
Add in chopped spinach and mix well with mushrooms and onions.
Add cream, cream cheese, and mayo. Stir until everything is melted and incorporated. Add salt and pepper to taste. Sprinkle Thicken/Thin not Starch over entire pan and stir in until the liquids thicken.
Sprinkle 2 slices of crumbled bacon over everything.
