Meal Ideas

I need new ideas for low carb dishes. I've listed some of the things that I've discovered that can be low carb.

Deviled Eggs
Taco Salad
Stuffed Mushrooms
Collard Greens and Country Ham
Beef Stirfry
Quiches

I"ve found that almost everything can be low carbed. Are you looking for main dishes? Soups? OUr best resource is Linda Sue's website.

Thats just it. i'm just looking for food ideas not recipes. I've checked out the recipe room but it takes a lot of browsing to collect ideas.

Do you just want snacky stuff?
How about for starters:

Celery & PB or cream cheese
SF jello
Roasted veggies....eg.. string beans, cauliflower
hot wings with ranch or bleu cheese dressing
jalapenos stuffed w/cream cheese & cheddar,bacon wrapped or sprinkled on and baked until tender.
pork rinds with dip or cream cheese
pepperoni, cheese

For me, the easiest thing is to just start with protein. When I stray too far from protein, I blow it!

Pork chops
Roast beef
Steak!
Roast Chicken
Chicken wings
Ribs
Shrimp
Fish
Chicken salad

How about:

fritattas
egg crepes with any kind of filling you want
custard
noodle-less lasagne
crumb-less meatloaf
crust-less pizza
ground beef and. . .(cabbage, green beans, spinach & cream cheese, cole slaw shreds)
tuna salad w/ lots of mayo, spices you like and maybe a little chopped onion if you can
egg salad. . .put it on top of an avocado half (you can top it w/ your tuna salad, too)
egg creams, warm or cold
heroin wings

crockpot, baby!!. . .toss in a big cheap-o cut of beef (chicken, pork), and shred up for salad toppers, chicken salad w/ mayo, taco-less tacos. Or roast a chicken atop some balled-up tinfoil (to keep it out of the juices) and pick at that for a couple of days.

Maybe be a little more specific of what type of stuff you are looking for. If you have a hard time narrowing down recipes you could try what I do and shop by whats on sale.

For example - Shoulder Roast is on sale at sweetbay for 1.99 / lb so I went looking for roast ideas. Ended up finding and making this Super Easy Pot Roast, I knew I would have leftover meat, so I decided I would make either beef stroganoff with it (simply by adding sour cream to the sauce), or a "steak," onion, egg and cheese low carb breakfast burrito (which is what we did and it was gooooooood).

When pork is on sale I look for pork ideas which has lead me to finding Feta Stuffed Pork Loin and Golden Pork Chops.

Everybody's different, but you sound like you get overwhelmed by recipes like I do. This helps give me a direction, AND saves me tons of money.

Just got some ground beast on sale, made meat loaf, also will be using it for burgers tonight and then taco salad next week.

Izzytheterrible- sorry for the confusion. the thing is, I want the ideas to be vague. I've been cooking since I was tall enough to reach the stove and I make a lot of dishes up. I just get stuck on what type of dishes I haven't thought of as being low-carbable. BTW, I don't think you are terrible

A few we've been eating/loving lately - kale/sausage soup, chile verde (crockpot), stuffed flank steak, chicken soup with spinach, and I'm about to make a pot of lentils/hambone.

Lentils aren't good for induction but are fine for the later rungs of Atkins.

Ah... got it. I understand, I did the same thing for a while, but ended up just confusing myself and costing myself a lot of money.

I gotta think in a direction, with limited choices. Which is why I do the whole meals based on whats on sale (well, that and cause stuff is so darned expensive!).

Good luck coming up with ideas.
