Hi there, I am looking for Kevin's recipe for low carb cake/cookie flour..does he have a web site? or is it just buried in among all these other fabulous tips?:blush:

Okay ... I must be really dense this morning.

I cannot find the "under construction" portion of the Recipe links.

Just where might I find this ... and please remember that I seem to be really stupid this morning!

He doesn't sell mixes. He makes the mixes from Carbalose flour and other ingredients that you can purchase from Netrition.

His last "flour" mixture. He says he uses this mixture for all his baking now and hasn't found any recipe where it doesn't work:

After several months and many experimental loaves this is my 3rd and final flour mix. I started out making this mix specifically for yeast applications but as it turns out it works just as well in all my cake and cookie recipes

1 cup LC Bread flour mix (14 carbs)

1/2 cup carbalose
1/4 cup wheat protein isolate 5000
1 Tbs wheat protein isolate 8000
1.5 Tbs almond flour
1.5 Tbs Hi-Maize resistant corn starch 260
1.25 tsp not/Sugar



8 cup LC Bread flour mix recipe


4 cup carbalose
2 cup wheat protein isolate 5000
1/2 cup wheat protein isolate 8000
3/4 cup almond flour
3/4 cup Hi-Maize resistant corn starch 260
3 Tbs not/Sugar

I'm planning some baking for this weekend. The UPS package has arrived. I have completely read the thread on Kevin's LC flour. I have one question.

Am I right in assuming that Kevin's LC flour can be basically used in "normal" bread and baking applications? What successes and failures have people had?

Yes to normal baking needs. No to bread. Low carb bread has special needs. For instance, there is usually only one rise. There is a long sticky on the subject.

Hi-Maize resistant corn starch 260

Netrition was out of Hi-Maize resistant corn starch 260 for awhile, but I see it's back in stock. I know several people were asking about it for this flour mixture.
