Low Carb Pizza Bites
 
These look interesting, from about.com

Ingredients:

* 8 oz cream cheese
* 2 eggs
* 1 teaspoon garlic powder
* 1 teaspoon oregano
* cup sugar-free pizza sauce or spaghetti sauce
* cup shredded mozzarella cheese, or combination mozzarella and other cheese such as Parmesan
* cup finely minced green pepper or other pizza topping
* 24 slices of thin-sliced pepperoni, preferably in large thin slices

Preparation:
Heat oven to 350 F.

1. Poke the pepperoni slices into the bottoms of the mini-muffin cups, or butter the cups well if you aren't using the pepperoni (I find that oiling the pans doesn't work as well).
2. Cream the cream cheese with a mixer until smooth and fluffy. Add eggs, garlic, and oregano, and beat until smooth.
3. Mix the rest of the ingredients in by hand.
4. Fill the muffin cups with the egg and cheese mixture.
5. Bake for about 15-18 minutes, or until lightly browned on top and set in center. Remove from oven, and cool for a few minutes (5-10), then run a knife around the top to loosen (I use a plastic knife for my nonstick pan). Remove to a plate.

Makes 24 pieces

Nutritional Information: Each piece with pepperoni has 1 gram effective carbohydrate, 3 grams protein, and 67 calories. Without pepperoni, each has 1 gram effective carbohydrate, 2 grams protein, and 47 calories.

That sounds like a great thing to bring to a party. I can see non-l/c'ers enjoying this too. I've already filed this recipe away. My only issue is I can't seem to find sugar free sauce anywhere. Maybe I'll have to break down and order some online.

I'm having a get together over the weekend, and thought I might make these. Today I did a test run. I made a half recipe, adding chopped green peppers and baby bellas, BUT omitting sauce (I can't find sugar free). I'm going to make these! They're really, really good. I like room temperature better than when they were still warm, 5 minutes out of the oven. They're not really a quiche (not very egg tasting, like quiche), more like a savory cheesecake. These sound yummy -- my 80 year old mother is diabetic and she really misses pizza... I think I'll make these this weekend... (one batch for me, of course!)

These do sound super...The amount of sauce is so tiny that I wouldn't worry about it at all. I would use what I normally use, which is the lowest carb one I can find..

I made these and thought they made a great grab and go type snack. I didn't even heat them up, just ate em cold right from the fridge.

Why not just use some canned tomato sauce? The recipe calls for seasoning anyway which will improve the flavor of the plain sauce. Or if you like a chunky sauce you can get Italian Style stewed tomatoes.

I just found Hunts makes a lower Sugar Spaghetti sauce. That is the lowest I can find...
