Is dessicated coconut the same as dried coconut?

And would regular not powdered erythritol taste grainy? Can you make it powdered in a blender?

I learned here that you can put the erythritol in a coffee grinder. It becomes powdered in about 4 seconds! I don't know if a blender would work.

When I made mine they seemed a bit dry too; however, by the time I froze them and then refrigerated them they were pretty nice. They still fall apart a little if you aren't careful when eating them but who cares. Possibly my protein powder was a different brand and made them drier. Next time I may put just a bit more liquid in them. I did notice a little cooling effect from the E. but not enough to bother me. They are really good.

A coffee grinder works great for this but I would think a blender would work okay too. A food processor did not work for me.

OMG. I made these with walnuts instead of coconut because i was out and didnt know, left out the dry milk powdr, oh lordy they are good. I also only used sf syrup and no erythritol. Taste like fudge. Keeper!

MsWoods I am happy you tried it and liked your version so much. Could I ask which whey protein powder you used? Linda's (lgpars) was dry and I'm guessing her protein powder is too absorbent or something. Mine were fudgy.

Eye- i ended up using half a cup but it was the cheap dollar tree brand so it isnt as sweet as Davincis or Torani.

Jennifer- i used syntrax nectar. I ate it when they were thawing and they were fudgy, but when they thawed in the fridge they were way too soft and i had to eat with a spoon, still delicious but soft.

I poured it in an 8x8 sprayed pan and put the rest of the walnuts on top. I froze for about 15-20 minutes, but I couldn't cut it after that, so I put it in the fridge. After 20 minutes in there it was a great fudge like consistency and I was able to pick it up. After that it melted more and I was not able to pick it up but I scooped it on a spoon and it was delicious and more of the consistency of fudge you would get on a hot fudge sundae.

Ms Woods, do you recommend the Syntrax Nectar protein powders? I'm looking to order a new one and am trying to decide what to get. I got a pkt of Jay Robb from Whole Foods and really liked it but it is so expensive. I like that the Syntrax Nectar are 0 carbs but wondered about the taste.

Judy- I was exclusively a Jay Robb girl until this week. I didn't have enough money to buy a tub of Jay Robb so I was going to buy 3 packets. They were $2.70/ea. That would be $8.10 just for this recipe and I can get a container for $20. I looked at the Syntrax Nectar (which I looked at because it's 0g carb) and it was only $1.59/ea which was only $4.77. I actually really liked it and will probably buy it more often.

I just made my third batch of these wonderful treats. We love them, thank you Jennifer. I used vanilla protein powder and a tablespoon of Hershey's Extra Dark cocoa. I used Coconut Torani syrup to re hydrate the dried coconut . The texture is so special, kind of sticky , like real candy. I mixed it all in a bowl, no machine.I used a cake froster to get the squares out the pan, worked great.
