I use the Pro Blend 55 Chocolate Fudge protein powder from Netrition - 3.5 g carbs per scoop. It is a mix of protein concentrates and isolates - good tasting and good quality whey protein. It is only sweetened with Sucralose (Splenda).

ok - so i FINALLY made these yesterday and MMMM!!!!!!!!!! now I do need to go get a different kind of CHOCOLATE protein powder as I used a "carribean cool" protein powder and while it's VERY coconutty, it's pretty powerful. I'm thinking with actual CHOCOLATE PP, it'll be even better!

I am going to make this again and wanted to try it with the chocolate cream cheese frosting. Oh, and I am also thinking the crushed cocoa almonds would be terrific too. That sounds so yum!!

Sounds awesome, Dawn. Have fun with it. It's sad but these days I can't have chocolate without risking a migraine and I can't have much coconut (too much fiber) and I can't have much in the way of lemon or lime juice (too acidic) - hmm, I'm pretty handicapped as a cookbook author. Fortunately, I always have willing taste-testers around me. So I'll live vicariously through your experiments, Dawn.

Mmmmm! Made these today with powdered coconut milk instead of regular powdered milk. I also skipped the sugar free syrup and added a couple droppers of orange flavored stevia (I love chocolate and orange together). I also only had unsweetened vanilla whey so, I used that and, I think it was plenty chocolaty and sweet.

They're in the fridge now but, the little pinch I tasted was yummy!

WildflowerMama, where are you getting your dehydrated coconut milk? I never thought of repacing it for the dehydrated milk, but it would solve a lot of problems for me.

I put them in the freezer for 30 minutes, then removed and cut them with a Metal Scraper…

Wildflowermama, I'm with Soobee on this one - where on earth did you find dehydrated coconut milk? That is so interesting. Does it make it more of a milk chocolate as that is what I was trying to do with the milk powder? Besides Splenda alone does not sweeten chocolate desserts optimally, but making it a milk chocolate changes that. Thank you for experimenting. You may have helped a few people here.

My local Asian Market has powdered coconut milk in packets. But, amazon sells it as well.

I have not used that variation. I think your original recipe is fab But I do have the coconut milk powder. The next time I make it I will have to try it with that.

I have used my Ninja once and because of the coconut oil it kind of seized up on me. But I know that others have not had this problem when they use their Ninja. I say try it and see how it does. I have made it last week but used the regular milk powder because I had that out and open. I just use the pan that I start off with on the stovetop and use a spoon to mix it all together. Maybe if I had used the Ninja (to give it one more shot) it would have mixed better together I should try it next time with the coconut milk powder to see how that sets up. I will let y'all know if I do end up trying it that way.

I make Birgit's chocolate creme in the Vitamix. It is mostly cocoa and cocnut oil. Works like a dream. Only it's kind of hard to clean, so I decided I HAD to double the recipe. That way I would lose less of the chocolate from every batch.

BTW, Bulk Spices Nuts Chocolates and Bulk Candy at Bulkfoods.com has powdered cocanut milk for about $11 a pound

This looks too good to pass, hope I can find the whole milk powder. Many years (30ish) ago I made protein balls with peanut butter, whole milk powder, honey and sesame seeds rolled in coconut. Forgot about them until I read this post. This sounds like a recipe to keep around!
