Dreamchaser, I agree, the stuffed baked potato is hard to walk away from. SO GOOD!

Linda - hey thanks for checking in. I bought some ground turkey last night and plan to make the stuffing pie this weekend. I can't wait!!!!!!

Our new favorite is the Bacon Cheeseburger skillet. I served it over a bed of shredded lettuce or use a whole lettuce leaf and make a wrap. I alway double (or triple :0 ) the recipe so we have LOTS left over. I eat it for breakfast even.

We tried the stuffing pie last night!!!!!! Everyone loved it. Only issue for my DD was she did not like mushrooms....so she picked them out.

The pound cake is to die for!!! It's seriously delicious and every bit as good, if not better, than high-carb pound cake. Next time I make it, I'm going to serve it with fresh berries and whipped cream.

I made the Cinnamon Crispy Pork Rinds 3 times this week. Though instead of pouring the butter over on a plate, I put the pork rinds in a gallon zipper bag so that I can shake it all together and the rinds are evenly coated. Though it is worth mentioning that you'll need to adjust the amount of sweetener depending on how salty the pork rinds are. I used two different brands, and one is way saltier than the other.

Even if you don't exactly use one of the recipes, the advice and ratings are so helpful!

Good golly Lindasue's Cheesy Crusted shepherds pie was amazeballs! DH and I Rock/Paper/Scissored over the leftovers it was that good.

I did make the following changes:

I omitted the carrots, (not a fan of cooked carrots), and I omitted the xanthan gum and replaced with 1TB cornstarch (adds 7 carbs to the entire recipe)
For the topping I used a mock garlic mash recipe with half a small potato added and blended in the vitamix, this was the first time I used the vitamix for the mash because I don't like lugging out that beast for one dish, but oh man the mash was soooo smooth and yummy it tasted just like regular mash to me, no lumps or graininess - very good. I also omitted the leeks and just topped with a cheese blend I had on hand.

Made the Almond Cheese Rounds as drop biscuits (shape into mounds) last night for dinner. They are sooo good. Made a second batch to snack on. Great warm...very good at room temp...also reheated in Microwave.

Glad this thread got bumped, I made the Stuffing Pie last night from recs in this thread and it was awesome! My husband and son loved it too, a definite keeper. Bonus, we had the leftovers for supper tonight. I also made her Kung Pao Chicken on Sunday for DH's Chinese food craving and it was very good as well.

The Just Like Stuffed Baked Potatoes was yet another winning LindaSue recipe! I have yet to make one of her recipes that my whole family didn't like, and almost all get requested over and over.

We also like the Whitecastle Cheeseburger Pie, and Texas Sweet Onion Pie.
