I just want to say thanks to LindaSue. Her recipes are delicious with reasonable ingredients and have really helped me through many weak moments on my LC journey.

Just made the Spicy Chicken Spinach Casserole - made it with half the cheese and cream cheese. The mixture was awesome to lick off the spatula, but I haven't tasted the final product yet. Will report back.

What type of spaghetti sauce do you use for the spinach lasagna? which sauce has the lowest carbs/sugar?

Very good - good kick without being overwhelming. 8yo LOVED it, 10you thought there should be less spinach, even though he loves other spinach-y things, namely my spinach dip.

Overall, very enjoyable, and I enjoyed my portion when I got home too - and there's a bit left over for my lunch.

I can tell you now. We made the white castle hamburger pie today and the DBF and I both looooved it!!! Used a bit less mayo and cheese but it was delicious and incredibly filling too! It is definitely a new favorite!

I just made the Sausage Pumpkin Chili, but followed Linda's suggestion and subbed ground beef for the sausage, and left out the green pepper. It was wonderful! No pumpkin taste but thickened beautifully. I love having single containers of soup and chili to take to work, it makes getting out the door much easier.

The pound cake is awesome for both low-carbers and non. Dottie's green bean casserole is another favorite.

Also, there are some brands who advertise sugar free on the jar. My local grocery store brand marinara also has no sugar that I can see added which is nice!

That recipe is great. Last time I took stoplight bellpeppers and sliced them thinly into each layer, it was so gourmet and awesome!!!

I just made the Spinach Lasagna for the first time last week and it was great. I did add about half a cup of cannned sliced mushrooms that were in the fridge and I also used some left over pizza sauce instead of spaghetti sauce and it worked great.

Edited to say it was delish. Hubby loved it. I had to take it away from him so we would have leftovers.

Those that make the Stuffing Pie, would ground beef work the same as the ground turkey? I don't ever buy ground tukey. I guess I could. Maybe I will add it to my list.

The stuffing pie is my favorite. I just bought the stuff to make it!

Ground beef would be fine, or ground chicken, I'm sure. It would change the flavor a bit, but I'm sure would still be fantastic.

I made one last week and was tempted to use ground beef because I had so much in the freezer and no ground turkey. I chickened out though because I think that using turkey makes it taste more like turkey and dressing. Ground beef would give the dish a totally different flavor. I'm sure it would taste good though, just maybe not so much like stuffing. I bought the cheap, mushy ground turkey that comes in a tube and that worked fine. The recipe calls for 20 ounces of ground turkey but I used a 1 pound roll instead and there was plenty.
