Had the "Mom's Crazy Cabbage" last night using ground beef that already had Linda Sue's taco seasoning in it and LOVED IT. Thanks guys for recommending this it'll stay in rotation and I have a new way of getting hubby to eat cabbage . Hoping DD will also like it. I think next time I'll try it with red cabbage then we are getting some other colour veggies in as this is a short fall at our place.

I have to give special props to LindaSue's Deep Dish pizza. I started making it before she even had a website I think. There are some other fabulous pizza recipes I've discovered in the last couple of years but LindaSue's pizza brought me through some challenging years that's for sure. I would keep crusts in my freezer for emergencies when I need to "cheat" and eat something just luscious and decadent. I owe her such a debt of gratitude for helping me see the fabulous choices available to me on a carb restricted eating plan. While it turned out that cream cheese was a deal breaker for me in the end and that limited my ability to take advantage of many of her recipes her creativity was a big part of my ability to weather the years it took me to get to goal.

If you haven't tried the deep dish pizza you really, really should.

MEXICAN SPINACH & HAMBURGER CASSEROLE ---made this one tonite for the first time and it was goooooood! Will definately make it again. Son and I tried to figure out what it tasted like...kinda taco like is what he thought. Would be super good inside a low carb tortilla and fried for quesadillas. But was great in a bowl with a little extra sharp cheddar cheese sprinkled on top.
Oh and I agree that anyone who hasnt tried the deep dish pizza....well we like that BETTER than most takeout.

Enchilada bake

I tried that enchilada bake last night, and I don't know if it was the chicken or the enchilada sauce but something was not right, and I tossed the batch. What brand of enchilada sauce do you all use? I only found one kind in my store, Victoria, or something like that.

But the spinach quiche is fabulous! I made that for a brunch and it was gone quick in a hurry!

I couldn't live without the deep dish pizza.

And I also make and freeze the crust. I make the crust and freeze half and use half for the pizza I am making now...that way I have 2 peices for today and 2 for leftovers tomorrow. Instant portion control.

Also, has anyone tried using the crust for other things like sandwiches? The crust holds up so well...I thought about trying to use it for a reuben or a grilled cheese....just melt the insides before putting it on the crust/bread.

Each Recipe says whether it freezes well or not so you won't have any surprises. It's hard to guess and some you would think are okay aren't. and others are, I'd just look through what looks good nd look for that notation.

JLSBP freezes well! as do the soups: Tuscano, Taco Soup, Sausage Cabbage,Country Cabbage, ... I eat a lot of soups, haha!

I LOVE Linda Sue's recipes, and this thread motivated me to make one I hadn't tried before. I just made (and ate a serving of) the Spicy Chicken and Spinach Casserole. Yummy! The only problem is that DH (who does not low carb) is going to come home from work and polish off ALL my leftovers because it is so good. (BTW - I halved the cream cheese and cheddar as Fizgig suggested).

The recipe from Linda's site that I use the most is for Broccoli Crunch Salad. It's another one that DH likes, so every time I make it it disappears quickly and I have to make it again.

I think my favorite is the Italian Casserole, but I love the Just Like Twice Baked Potatos, White Castle Cheeseburger Pie, French Onion Burgers, Taco Bake, and Coney Island Chili Dog Pie. I like most of the recipes that I have tried.
