No Carb Chips Recipe

I love eating low carb. This is my adaptation for low carb chips, based on several recipes I have seen, read and tried. These may be too salty for some, so trial and error kids! Enjoy!


Low Carb Chips

2 tbls. Flax meal
4-5 tbls. Water
¼ cup shredded cheddar
1 tsp. garlic & herb (Mrs. Dash)
1/8 tsp. salt

Mix all ingredients well. Spread onto parchment paper – try to spread into circle. Place in microwave and cook on high 30 seconds at a time. Total time will be about 4:30 – 5 minutes, depending on the microwave. Keep a close eye on mixture. It’s done when you can no longer see the mixture bubbling up in the center. **Remove from microwave, and while mixture is still warm, slice into triangle pieces with a pizza cutter.

**I have found if I take the mixture out right before its finished cooking (at about 4:30 mins into the cooking process), it’s easier to slice it up into triangles and prevents the “chips” from crumbling into little pieces. When I’m done slicing, I place the mixture back into the microwave for about 30 more seconds.

Flaxmeal & cheese do have carbs. Flaxmeal has a small amount .1 per tbl and 1 oz of cheddar has around 1. Some spices or seasonings also have carbs. Remember US pkg laws allows food products with less than a carb to be labeled <1 from .5 to .9 and under .5 as 0-so if you are carefuly counting carbs on Induction you have to be careful-many people simply overdue when they think something is 0 carb. Just Google a hidden carbs calculator to help you out. It's still very good carb wise and healthy-only around 1.2 carbs.

Microwave Flax chips-Question. You said to cook in microwave for 30 seconds at a time for up to 5 minutes . Does this mean to let it cool all the way before resuming ?
