Chicken Spinach Parmesan Casserole

Found this recipe on Linda Sue's site! It's induction friendly and it was soooooooooo good! My husband is currently on induction with me and LOVED it even when I told him it had 2 ingredients in it that he despises! (sour cream and mayo)
You gotta try it! It sure was yummy.

My husband has alot of weight to lose and he started induction last Monday with me............he gets on the scale and guess what.......he is 14 POUNDS down!!!! I lost 3 which is fine but makes me so mad that men can lose so much faster. According to my Wii Fit Plus I have lost 1 point though on my BMI.
Don't know if it's accurate but I am owning it! I need all the incentive I can get!

Made this last night as I had leftover chicken to use up.

It was wonderful!!!!! I will add an onion next time. I also added cayenne pepper and a little hot sauce to the mix as we like spicy food. It was very, very good!

Has anyone tried this with another vegetable aside from spinach? Like cabbage or something?

I made myself a little sick with a spur-of-the-moment casserole I made up that had spinach in it. It had kind of a sickly, alcohol-like smell to it. I think I broke the cream while heating it. I tried to eat it anyway, even though it smelled bad, so I made myself sick. I won't be eating cooked spinach for a while, I think.

I made this last night, but with Green Beans instead. It was very good. Next time I will add more cayenne to the chicken and more of the cheesy topping Will definitely make this again.
