honeybuns-- I don't like windows, save for the ones on my computer.

Here are some breakfast bread sticks. They're perfect for dipping in everything from sunny side up eggs to sugar free syrup. The image is super dark and wonky. Sorry about that.



Here, on the other hand, photographed outside, is an amazing creamy spinach soup that I really love. It's super small. For some reason, my new site template likes smaller pictures that don't enlarge on command. Even my dog (dare I say it) listens better. :P

Yeah she is! In some pics I think Chleo looks a bit like Sandra Bullock...or maybe Sandra looks like Chleo?

Stop! I just blew diet root beer out of my nose. LOL

Waffles for breakfast made with coconut meal. I made mine into sticks for my chirruns, and then the plate seriously almost blew off of the deck because it was so windy.

Here is a heated artichoke tomato dip I just made and absolutely love. It's my new favorite. Thinned down with some heavy white cream, and you have an amazing, quick alfredo for any main dish.

Remember that ad on the television years ago, a lady popped something (I forget what) into the oven. And to make it look like she did a lot of work she bopped herself in the face with an oven mitt covered in flour? Then she walks out into the living area looking exhausted.

YES! I loved that ad! It was for Rice Krispie Treats! I always think of her when I make something that's really easy that I want people to think I worked incredibly hard to make.

I made Oopsie rolls and added 2 T. of fluffly chix bake mix.

The recipe is freaky easy. I can PM you the recipe if you can't find it! I was surprised cheese could brown in a crock pot. It's like a mini oven... only more moist.

I want to reiterate that you are welcome to post photos of your recipes. However, if you post a photo and you have a recipe to share, please post the recipe as well. If you have no interest in sharing your recipe on LCF, please do not post your photo.

We have been asked by several LCF members to address their concerns that some members are posting food photos and requiring members to go to another site (such as a blog) to obtain the recipe. Concerns have been noted that this is drawing members away from LCF.

While we understand that bloggers want to attract attention to their site, we also need to address the issue that it is our intention to keep members on LCF.

Therefore, you are welcome to post a photo AND a recipe. You are welcome to include a link to your blog ... the best place is in your signature. However, we ask that you refrain from posting photos and forcing members to go to your blog for the recipe and more information.

LCF is a huge forum with many thousands of members, and we try to handle issues as fairly as possible. We hope you can understand our position on this matter. Our intent is to keep members on the LCF site while recognizing that members do have blogs they would like to share.

I resurrected this recipe from years and years ago and forgot how much I loved these!! I was thinking of trying them now with some oat fiber added or whey protein powder in the pastry portion.




Cheese Danish

Pastry portion:
3 extra large eggs, separated
1/4 tsp. cream of tartar
2 Tbs granular Splenda, and 2 Tbs xylitol
1 teaspoon cinnamon
½ tsp almond extract
3 Tbs. sour cream

Filling:
8 ounces cream cheese, softened
1 egg yolk
2 Tbs granular Splenda, and 2 Tbs xylitol
1/2 teaspoon lemon extract
freshly grated lemon zest to taste

Pastry directions:
Separate eggs, putting the whites in a large bowl and the
yolks in a medium bowl. Beat egg whites and cream of tartar until very stiff.

Add sour cream, cinnamon,extract, and sweetener to the yolks
and beat well until smooth

Gently fold yolk mixture into the whites, using a spatula.
Blend well. Place a Silpat on a cookie sheet and spray with cooking release spray.
Divide 6 equal mounds of batter to make 6 Danish. Draw a long indent
on each mound down the middle and fill with filling.Leave egg mixture on the sides. Fill a ziplock bag with filling and cut off the corner. Pipe the filling into the indent. Bake about 25-35 minutes at 300 until golden brown. Watch closely at the end.

Let cool before taking off silpat so filling has time to set.

Filling:
Microwave cream cheese until soft. Mix in
the egg yolk, sweetener, extract, and lemon zest. Fill pastries.



There are many versions of this floating around and I don't know who to credit the original recipe to. Sorry, it was long ago.

Yes it was back in the day of Atkins Revolution rolls!! Then lots of modifications came after. I don't remember the carb count, and I don't have Mastercook. Sorry!

Sexy Egg Salad
8 hard-boiled eggs, peeled and chopped
1 Tbsp vinegar
½ cup chopped red onion
½ cup celery chopped (1 long stalk)
¼ cup red bell pepper, chopped
4 Tbsp chopped green pepper
2 stalks green onion, chopped
2 kosher baby dill pickles, chopped
1 Tbsp mustard
1 cup mayonnaise (or more for moisture/flavor)
1 tsp salt
½ tsp pepper
paprika

Mix all ingredients save for eggs. Chop eggs and add them to the dish (if you’d like to prepare the dish as pictured, add only four of the eggs to the salad and slice other four eggs open along the length and place round-side down in the bowl). Refrigerate until serving. Add paprika before serving if desired. Keep covered in the refrigerator.

Makes about 4 cups, or about 8, 1/2 cup servings. Recipe can be doubled.

Nutritional Information per 1/2 cup serving: Calories: 287 , Carbohydrates: 2 g, Fiber: 1g, Net Carbohydrates: 1 g, Protein: 5 g, Fat: 28g
