Awesome ideas and recipes! Thank you so much for experimenting!

I was at a birthday party last night and indulged in a piece of chocolate gooey butter cake which was so worth it. I thought it would be too sweet but it wasn't. I must admit that when I looked up the recipe on the Internet (Paula Deen), I thought immediately of you, Birgit, as it seemed liked something that could be made low carb.

Once again, thanks so much and I really like your blog also. Great job.

I have always cooked from scratch (mostly) - now I just do it low-carb and put it on the blog as I go

Birgit, I made the honey tonight (double batch) and it is wonderful! It was so thick after boiling a couple of minutes, it was like taffy, so I added a couple of tablespoons of water and reboiled it and it was perfect. I did not add any extra sweetener, it was sweet enough. Really really tastes like honey! Now I will proceed with my favorite honey-sweetened recipes!

It does, doesn't it! So glad you like it!
I don't use any extra sweetener either anymore. At the time I was comparing it to the real honey I had and thought it needed the extra sweetness to get it to what I was tasting, but I find I don't need it really. And I've been adding some of the commercial "honey" stuff that is really just flavored syrup to thin it out a bit too. Gets it to the perfect consistency! Once I'm out of that I will just use water like you!

Mr. Peanut Sandwich Bread. Oh my GAWD, is this stuff good. I have to make it again.









Linda's Chicken Chile Verde with cabbage and salsa and sour cream. And with diced jalapeños!









Linda's Salsa Chicken, made with rotisserie chicken as a shortcut.








Italian salad mix from Fresh & Easy, with an egg and with the best dressing, Linda's Ranch Dressing.









Carne asada from the neighborhood Mexican market called Rodeo's. THE BEST carne asada there ever was.









Linda's Bacon Beef Rolls, a big favorite.









"French fries" made out of celery root. They look good, but they got soggy. Poops!









Linda's Buttered Almond Crème Brûlée.

I made Jennifer Eloff's Low carb whole wheat bread today. I made a loaf with half the dough. With the other half, I rolled it out into a thin rectangle and brushed it with butter, sprinkled it with cinnamon, Ideal Brown, and a dusting of crushed pecans. Rolled it up, cut it into rounds and let it rise in a glass baking dish. Everything rose to magnificent heights and the result was a loaf of incredibly light bread and wonderful sweet rolls!

Hungarian "Apple" Pastry

I made this after dinner last night and it was done, start to finish, by 10pm. I cut them too big at first and took this snapshot (which is actually the better shot) before deciding I need to cut these smaller. When I cut them down to a smaller size, the pic on my website wasn't so crystal clear. Think I jarred the camera or something. Anywho....these are really good and not so difficult as they look to put together. We needed to take something to the nursing home where DH's Mom is for a luncheon they were having today and I wanted to test using chayote in this recipe I've made for years. Came out much better than I anticipated actually.
