Shelly's Belly: Bison Cheddar Cheeseburger wth Grilled Onions and Mascarpone Mushroom Sauce

It was super easy but not the fastest dish to make. I carmelized the onions in butter. Covered them on low heat for 30 mins and then uncovered to finish carmelization. This took about 2.5 hours on low heat. I've recently discovered you can do this in a crockpot overnite!

When the onions were almost done, I started cooking the bison burgers (bison, salt, pepper) so both the burgers and onions would be done at the same time.

I took those out, added more butter, and sauteed the mushrooms. When they were soft I added mascarpone cheese to desired creaminess ( 6oz or so for me). Salt and pepper to taste.

I took those out and put more butter! Then I "fried" the slab of cheddar cheese in the butter until it was melty and threw on top of the burger.

It was sooo good!

6 chocolate coffee ice cubes
1/2 scoop chocolate or vanilla protein powder (can leave out*)
2-3 T. SF vanilla Davinci's
2-3 T. SF Chocolate syrup (I use Walden Farms)
1/2 c. my half and half (1/4 c. HWC and 1/4 c. water)

Blend (add more water and HWC if necessary),and enjoy. Ohhhh don't forget to top with whipped cream!

*If you leave out the pp you may need a bit more sweetner. Just adjust to taste.

I use Folgers Chocolate Truffle Coffee. Make a pot, let it cool and then pour into ice cube trays and freeze. Then when they are ready you use 6 for this recipe. Hope that helps.

Bowulf - The potsticker patties look delish. Are you using the recipe on Lindasue's website? If so, did you add ginger? Its not listed on the recipe, but I am thinking it would be good in it.

Wow, I have been reading thru this thread and just drooling.. I am on Maintenance and find I really have to watch my calories now more..Why is that?? some of these look great but have way too many calories for me

But I did find some I can manage to eat and keep it low. yum..

I didn't put ginger in mine because I don't care for it all that much. I'm learning to like it better the more I have it though and you can certainly add some.
