Does anyone have a recipe for a breakfast casserole that can be done over night in the crockpot? I have to do a breakfast thing at work and since mornings are crazy with three kids I thought a crockpot idea would be easiest. All the recipes I can find call for a filler like bread chunks or hashbrowns.
You could put together a breakfast casserole (try Linda's site or search this site for recipes) the night before and throw it in the oven when you get up. It can bake while you and your family gets ready. Then put it in an insulated carrier (with a microwavable insert) to take to work. Those things stay hot for a long time.~Dee.
Here's an easy one:
6 eggs, beaten
1 lb. Little Smokies or 1 1/2 lbs. bulk sausage, browned and drained
1 1/2 cups milk (I use half & half or Cream thinned with water)
1 cup shredded cheddar cheese
8 slices LC bread, torn into pieces
1 tsp. salt
1/2 tsp. dry mustard
1 cup shredded mozzarella cheese ( or Monterey Jack, etc.)
1. Mix together all ingredients except mozzerella cheese. Pour into greased slow cooker.
2. Sprinkle mozzarella cheese over top.
3. Cover and cook 2 hours on High, and then 1 hour on Low.
I sometimes add onion flakes or a little sauteed onion to this. Don't have the carb count, sorry!
Here's another good one:
Egg and Broccoli Casserole
24-oz. carton small-curd cottage cheese
10-oz. pkg. frozen chopped broccoli, thawed and drained
2 cups (8 oz.) shredded cheddar cheese
6 eggs, beaten
1/3 cup flour (I either omit this or use a little Carbquik)
1/4 cup melted butter
3 Tbsp. finely chopped onion
1/2 tsp. salt
Shredded cheese, optional
1. Combine first 8 ingredients. Pour into greased slow cooker.
2. Cover and cook on High 1 hour. Stir. Reduce heat to Low. Cover and cook 2 1/2-3 hours, or until temperature reaches 160 degrees and eggs are set.
3. Sprinkle with cheese and serve.
We also love mushrooms in this one.

BoBo has a breakfast casserole recipe...basically you saute green peppers, onions, and mushrooms. Brown some breakfast sausage and hamburger together and drain. Add in softened cream cheese until it melts. Add in peppers, onions, mushrooms and put into a greased pan. Top with 4-6 beaten eggs (more or less depending on how "eggy" you want it) and cheese of choice (cheddar, pepper jack, etc) and bake for about 30 mins. Very tasty.

Crock Pot Breakfast Casserole Cleo
4 cups hashed brown jicama or daikon radish hashed browns (optional)
12 ounce package crumbled, cooked, drained bacon slices
1 pound cooked, drained ground sausage
1 medium diced sweet yellow onion
1 diced green bell pepper
1-1/2cups sliced fresh mushroom
1-1/2 cups fresh spinach
2 cups shredded Monterrey Jack cheese
1/2 cup chopped Feta cheese (or other sharp cheese)
1 dozen eggs
1 cup heavy white cream
1 tsp. salt
1-1/2 tsp. pepper
Place a layer of hashed browns on the bottom of 1 4-6 quart slow cooker. Follow with a layer of bacon and sausage, then onions, green pepper, spinach, mushrooms, and cheese. In a separate bowl, beat the eggs, cream, salt and pepper together. Pour over the crock pot mixture, Cover and cook for 10-12 hours on low.
Slow Cooker Breakfast Meatloaf Meatified
1 tbs coconut oil
2 cups diced onion
2 lbs ground pork
1/2 cup almond flour
2 tbs sf maple syrup
1 tbs garlic powder
2 tsp fennel seeds
2 tsp dried oregano
2 tsp red pepper flakes
2 tsp ground sage
2 tsp dried thyme
1 tsp black pepper
1 tsp paprika
1 tsp sea salt
Soften the diced onion in the 1 tbs coconut oil at low-medium heat, cooking until they are just translucent. Remove from the heat and set aside. Add all remaining ingredients except the ground pork to a large bowl. Whisk or stir to combine. Add the ground pork and softened onions to the bowl and use your hands to evenly combine all the ingredients. Gather up the meat mixture and place it in the center of your slow cooker's insert. Use your hands to shape the loaf so that it has at least a half inch gap between the loaf and the sides of the insert. Pat the top of the loaf flat and put the lid on the slow cooker. If your slow cooker has a temperature probe, slide that into the meatloaf now, making sure not to let it touch the bottom of the pot. Cook the meatloaf on low until it reaches an internal temperature of 150F, about 3 hours. Let the meatloaf sit for 15 - 30 minutes in the turned off and uncovered slow cooker before trying to transfer it to another dish. Refrigerate overnight and then slice in the morning. Reheat the slices in an oiled skillet at low-medium for 1 - 2 minutes per side before serving.
I made a breakfast casseroles in the crockpot last time we went camping.
Base ingred. were 12 eggs, 1/2 c. HWC, 1/4 c. water, 8 oz. shredded cheese.
day 1- added cooked, crumbled sausage, bacon and put some tater tots on the bottom (so I could eat off the top). Used cheddar cheese
day 2- peppers, onions, sausage, mushrooms. Used swiss and mozz cheese
day 3- onions,cherry tomatoes cut in half, cut up leftover hamburgers. Used pepper jack cheese
day 4- leftover veggies ( not sure what was in there to be honest), cut up pepperoni, sausage links, and all the rest of the cheese we had.
I have an older crockpot and they were fine all night on low. I think the newer ones would overcook it if left on low for 8 hours.
Any combo that would make a great omelette would work.
Next time I want to try steak and cubed cream cheese with cheddar cheese.
The kids wanted a pizza one, but I'm not sure about pizza sauce mixed with eggs.
