I printed off this recipe over a year ago and never got around to making it until tonight. Man what had I been missing? I made a couple of alterations. I am the only one eating it so I cut the recipe in half. I don't like tomatoes, so I used a 4 ounce can a of green chilies instead. After I scoped a serving into a bowl, I added in a packet of Taco Bell hot sauce and some shredded Mexican cheese. It was so good.

There is a mom and pop restaurant here that makes 6 different soups and all of them are yummy. Actually, we mostly go there for the soup. Can't let a restaurant outdo me so I have been trying different recipes. Some were OK, some were pretty good, but none to rival the restaurant soup until I made this taco soup today. Talk about a comfort food!

After searching for something for dinner that was easy since I worked today and didn't want to go out on this crappy night for dinner, settled for this soup. Love it! Only added one can rotel tomatoes and one can diced tomatoes and it was still spicy enough. I did increase all of the other spices though as I don't think it is enough as written (everyone has different tastes). Also added a huge bunch of fresh parsley from my pot outside. It was very pretty with all of the colors and definitely tasted restaurant quality.

I got the following email message recently from my sister: "I can't find that creamy chili recipe with the cream cheese and was hoping you could send it." I couldn't figure out what she was talking about, but it turned out to be "Cheri's Creamy Southwestern Taco Soup." I have made this many times for other people who aren't doing low carb and they always seem to love it!!!

I love this recipe. It comes together so easily, and everyone likes it. I have a staff meeting at work tonight and I think I will bring it to them.

Made this, great flavor but to much liquid and not enough stuff. I ended up pouring out quite a bit of the liquid when I put the left overs in the fridge. Does anyone else find this to be when they use ground beef? Maybe it won't be like this when I use ground beef

Mine is also brothy, but I like it that way. I use a whole quart box of chicken broth instead of the 3 1/2 cups. I guess I just figured that that was why mine was more liquidy than creamy.

It's not recommended to freeze. I don't know if anyone has tried to or not. I just made a pot and it's "melding" flavors before dinner. I didn't have any heavy cream (don't know how that happened!) so I added 1/4 cup each Greek yogurt and Hood milk, then whisked in 1/2 tsp gluc powder.

I froze some and it was fine about 2 weeks later. I freeze leftover everything and then take it to work on the days I don't have time to cook.

I made this last night. Didn't have 2 cans of rotel so just left it out. Added some queso Chihuahua and melted it in. Oh sooooo good. Hope it reheats well. I have lots of leftovers.
