Does anyone know how to make a strawberry sauce out of frozen strawberries?

For a cheesecake topping?

I'm a cheesecake purest...I like mine straight up...but I use frozen strawberries to make shortcake with.

Thaw the berries...I just zap them in the microwave just a tad until they are about half thawed; then throw them in the food processor with some Splenda and process until they are pulp...taste for sweetness... then slice a few whole ones and add to the mix and you have sauce.

I have always used a pastry cutter. I spose even a potato masher would work. Mine always got a little "soupier" after sitting (with the splenda already added).

You cook the filling for a strawberry pie because you have to thicken it enough to hold it's shape for a pie but I've never seen a recipe that calls for cooking a sauce...but if you want a cooked sauce you could try google and see if you can find one but the thickener is going to add extra carbs.

I've cooked a raspberry sauce, no reason not to do the same with strawberry if you want it thicker and more concentrated in flavor. Chop them up, put in a pot, turn on low and stir a lot - or do it in the microwave, my favorite method! You can thicken a bit with some Thicken Thin Not/Starch or something similar if you want, too.

I've also chopped up strawberries, heated some SF strawberry jam til runny, and stirred the chopped up berries into it. Makes a nice topping too.

I would just add a small amount of water to my berries and cook slowly while mashing them until a easy boil , and I think that should do it for you. Of couse add sweetner of your choice. You could also use SF Torani or DaVinci instead of water. HTH

I have done this 2 ways.. Cook your berries with some water, splenda, then add some unflavored gelatin to the hot water and stir..Don't add alot or you will have jello..just about 1/4 of a package.

The other way is with some SF strawberry jam..water/berries..very nommie.

OK, I tried the frozen strawberries pureed with the sweetener and it didn't hit the spot for the cheesecake.

I'm looking for more of a syruppy or glaze taste.

That's why I think I need to try cooking the strawberries. I need to try something different.

I've made a cooked strawberry sauce for cheesecake and it was really good! I just eyeballed it. I took about 1-2 cups of frozen strawberries and put in a sauce pan on the stove. Added a little bit of water (like an 1/8" in the sauce pan) just to get the strawberries to cook/thaw more quickly. I added maybe a TBS of sweetener and a pinch of stevia (I use xylitol but any sweetener would work). Just simmer it until the berries are soft (they will break up as they cook and you can mash them with a fork or wooden spoon if you don't want chunks). Just simmer until it's thick and then cool (fruit has pectin and it will thicken naturally).
