Could the "lighter tasting" pork rinds be sweetened with Splenda etc., or not and made into a crust for pie, sweet or savory, I'm thinking quiche here, and used that way?

Yes you can do many things with pork rinds. There is also a recipe for chocolate puppy chow. It's really good.

Yum. I'm going to have them on my chicken again tonight.

I bet you could put some in low-carb cookies and you wouldn't even be able to tell. You'd just get the 'crunch' factor. I remember when that chocolate chip cookie recipe with the crushed potato chips was all the rage.
