White sauce

Last night I made creamed carrots for DH and he said it was the best he'd ever had (that's rare...usually it's [U]almost[U] as good as what grandma made!) Anyway, I tasted the white sauce made the traditional way with flour and it was really good. What's the best low-carb thickener that anyone has found? I was looking for info on this last night and found Linda Sue's white sauce made with Carbalose (don't have that but do have Carbquick). Also, there was quite a bit of info on About.com...different ingredients to use, such as guar gum, xanthan gum (I do have this), not/Starch (Laura Dolson said she particularly likes that), pureed vegetables, reducing cream, whisking sour cream into a sauce, cream cheese, egg yolk, nuts and nut butters.

One thing for making white sauce that I really like is CarolynF's low carb homemade milk. It is the best!

Just curious if anyone has favorite ways of making white sauce.

I'm making a Greek dish tonight which requires white sauce. Now it calls for eggs in the sauce (also flour). I'm skipping the flour and seeing if the eggs will thicken it up enough.

If it's not thick enough, I'm adding some cream cheese..

Thank you both! Sounds like maybe I need to get some Carbalose.
