I kept reading threads about the canned pumpkin shortage, so I bought two big cans to make this again!!!

I also think the spices was right on..usually pumpkin recipes I add a bit more, but no need with this one.

Oooo, yay! Let us know how it turns out!

BTW I found sugarfree Tang drink mix at Target the other day - been craving that "Russian tea" you make with instant tea and Tang and spices and just spoon some into a cup of hot water when you want it. YUM!

I made some sugar free "Spiced Tea" as gifts several years ago. I used Crystal Light stuff. Mixed a whole bunch of stuff: lemonade, peach tea, lemon tea, regular tea, orange sunshine, ground cinnamon, SF orange jello, SF pineapple jello. Mixed it all up and tried it. Tweaked from there. I wish I could remember everything I used. It was GOOD.

Lisa, you mix up the drink mix according to the package directions and then use 3/4 cup of the stuff in this recipe. HTH!

just finished making this and I decided to can it--put it in little jelly jars-got the jars and seals hot before I added the pumpkin butter-hope they all seal-not sure if this is the way its supposed to be done or not--but if they dont seal-I may just put them in the freezer and hope for the best? since its just me on lowcarb here in the house I didnt want to make it and just lose half of it or more since I couldnt eat it that fast.. its a delicious recipe--I used some sf Kroger brand apple cider mix I found in the pantry that I know had been there forever! still worked!

I found the alpine hot cider drink mix at krogers. It was in the coffee/tea/hot cocoa area! Will be making this tonight!!

No! That's not the way to can safely! Store those jars in the freezer, please. Even with an elaborate pressure process, there's really no way to safely can pumpkin puree or pumpkin butter at home, because we can't control the acidity and viscosity the way industrial canners are able to do: National Center for Home Food Preservation | UGA Publications

It really is important to can safely, which means following precise directions for sterilizing, acidifying, boiling, and timing. I can a lot, and it takes very careful attention. Freezing is a lot easier if you're not absolutely certain what you are doing with canning.

Tiva is absolutely correct. And the old addage, if in doubt if it is safe to eat, throw it out. I am going to freeze this. Just me also. Use the cute jars to store just what you will be eating in the next couple of weeks.

I finally have mine in the crock pot! I made a couple changes but nothing major:

Instead of using the SF cider packet, I boiled one cup of organic apple juice with 2 tsp of "mulling spices" until it reduced down to 3/4 cup of liquid. I drained off the spices and added the liquid to the pumpkin mixture.

I also used 1 cup of SustaBowl instead of Splenda.

I have a 3 year old daughter and am trying to keep all the artificial sweeteners out of the things I plan to feed her. It may up the carbs for me, but then again, if I don't want her consuming the artificial stuff, then why should I eat it? LOL Don't get me wrong, I'm not perfect and I still have my diet sodas but I just know she's going to want some Pumpkin Butter!

I think that many of us freeze the straight canned pumpkin that way and use for One Minute Muffins and pumpkin shakes so I don't see why you couldn't for this recipe.

Just made it yesterday and did the ice cube thing. Now have a nice bunch of pumpkin butter servings. Going to mix it in with cream cheese, mmmmmmm!
