Pumpkin Flax Muffins???
 
Does anyone have a tried and true recipe for LC pumpkin flax muffins? Or any LC pumpkin recipes for that matter. I only have "regular" ingredients, so please keep it simple! ;)

With fall coming very soon, here in Florida, FINALLY, I am in the pumpkin mood!!

I do the regular 1 minute muffin, but add about 2T pumpkin and some pumpkin pie spice. You almost double the cooking time...around 2+ minutes. It's really delish!

I made sweet potato muffins using this method. Wow! What a treat!:high5:

I like raisins, dates, and walnuts...so I can add that to the mix. Once cooked, I refrigerate them until really firm and toast them in my cheap toaster. Wowzers! Add a drizzle of maple syrup and butter.

Good Lord! I can think of hundred of recipes with these muffins.:laugh:

Note to self: Buy toaster oven.

If you add a touch of cream to the one minute muffin recipe to thin it slightly, it also makes a GREAT pancake ~ I usually add a few frozen blueberries to them, but pumpkin would probably also be good.

I do the same thing with the OMM's. So many choices!! I made a pumpkin variation last night. I also like adding unsweetened cocoa or lemon/poppyseed.

I recommend Dottie's Pumpkin Pound Cake with Cream Cheese Layers made as muffins.

1 cup of canned pumpkin
1 cup of Splenda
1 tea of baking powder
1 tea of vanilla
1/2 tea of pumpkin pie spice or 1 tea of cinnamon
1/8 tea of salt
5 eggs
1 cup of almond flour (she used 1 1/2 cups of almond flour)
1/2 cup of flax

Cream Cheese Layer
8 oz of cream cheese softened
2 Table of Splenda
1 egg
1/2 tea of vanilla

Mix pumpkin, splenda, baking powder, vanilla, spice and salt until well blended. Beat in eggs. Add almond and flax.

In a separate bowl beat cream cheese, egg, Splenda and vanilla.

Pour half of the almond/flax mixture into the bottom of a well greased muffin tin. Next top with the cream cheese mixture. And finally top with the remaining almond/flax mixture.
Bake at 300 degrees for 25-30 minutes.
Makes 12 muffins.
