Heavy Cream

Decided to introduce heavy cream into my low carb life. What are the way you are using heavy cream? I used to use gourmet heavy cream I believe for my home made mac an cheese. Can u give me some suggestions plz? Im lost!!!

I use it in:

scrambled eggs
whip it up, add some sweetner and some almond flavour, or vanilla and use it to bring my fat up
coffee
tea
reduce it in meat fat for gravy
cream, eggs and a bit of sweetener makes custard that you can add any flavourings, squashes, cocoa powder
use it anywhere milk would be used

That's pretty much how I use it. I cut it with water to make more of a milk consistency and to cut the calories and carb count. I usually do half and half, except in the mock french toast recipe.

In coffee 2? How much do u use and do u use a artificial sweetner if so what do u use?

It is SO easy to go overboard with heavy cream because it's just so darned tasty! I put it in my coffee each a.m., occasionally over frozen berries, and somtimes with egg custard. It can be the culprit if I stall, so I have to be careful with it.

I limit it to 4 teaspoons. I haven't weaned myself from sweetner yet - I don't care for stevia - I use Swee-N-Low.

I've only been LC'ing since 8/8 and I'm being pretty strict with Atkins Induction Phase. Here is a sample menu:

B-2 slices of bacon and 2 eggs; or 3 eggs scrambled with a little cheese (remember we can only have 4 oz of cheese per day so go easy). Coffee with HWC and sweetner
L-Chicken thigh and leg (I prefer dark meat) or a chicken breast. I save my salad for dinner
D-Steak or 1/3 pound hamburger with a 2 cups lettuce, a little tomato and spring onions with low carb dressing or EVOO and vinegar.

Snack - sugar free jello - you can have a small amount of cream on that if you want

I started than I failed so Im starting back again fresh as of 10/01/09. I just couldnt get the carb cravings out of my head. Plus I suffer from a night time eating disorder But I have been good since the 1st

I do have to limit cream because I love it so much I have 3 ounces a day if I am low on calories I have 4.

I have it in my coffee, in egg creams, I use it to make an onion gravy that I put on top of chicken/pork, and I have an iSi cream whipper that I use - a dollop on some sf jello or pudding, or a squirt on top of a cup of tea in the evenings. I also put a dollop on the one-minute chocolate cakes.

You can use it for cream soups. I made this recipe recently and it was very good: http://www.wolfgangpuck.com/recipes/.../Mushroom-Soup. If you are on OWL Rung 9 or further (assuming you are doing the 2002 plan), you can use cornstarch. A substitute for Induction could be xanthan gum (I never used it though, so I'm not convinced it works). At the suggestion of another Atkineer, what I did was to simply change the order of the steps: I sauteed shallots and mushrooms in butter, with thyme and a bay leaf; then I added cream and stock, brought the whole thing to a boil, and then reduced the heat and let it simmer for a few minutes; placed everything in a food blender and pureed the mushrooms. This came out thick enough for me, but if it's not thick enough, then return to the sauce pan and cook to reduce the liquid a little more. The original recipe has 1/2 cup heavy cream per serving (during Induction cream is limited to 2-3 tbsp as a drink or 3 oz as a "Special Category Food", but those "special" foods are foods that might stall/slow down weight loss for some people) and I couldn't motivate using that much even though I'm on OWL Rung 6. So I altered the amounts a bit and also added some meat to give the soup more body; this is what I used (for 2 servings):

200 g (~7 oz) mushrooms, sliced
1-1/2 tbsp lemon juice
1 cup homemade chicken broth
1/3 cup chicken meat (left over after making the broth)
2 oz heavy cream
1/2 tbsp unsalted butter
1 tbsp shallots, chopped
1/8 tsp dried thyme
1/2 bay leaf (small)
1/4 tsp salt
1/4 tsp white pepper
1/3 tbsp dried parsley

I chopped the meat in the blender before adding the mushroom mixture over it. The whole recipe makes about 600 mL of soup (~21 fl oz or a bit more than 2-1/2 cups).

Or you can make a super easy cheese sauce by melting shredded cheese (I shred my own from a big block, to avoid starches they add to prevent caking) in some heavy cream.

Or you can make a sauce for grilled chicken by heating heavy cream with a few leaves of fresh basil or parsley (scrape them with a wooden spoon to release the oils), tarragon, lemon juice and capers.

------

If you are more adventurous, heat cream with thyme, sauteed shallots, coarsely chopped lemongrass, a vanilla bean (cut it in half if you want more vanilla flavor, which I did), a bit of dry white wine, salt and pepper to make a sauce. I used this over prosciutto-wrapped cod.

For those going by DANDR 2002, this recipe is only "legal" from OWL Rung 5 on, because it uses alcohol.

Or you can make panna cotta, cheesecake or ice cream. But if you have a sweet tooth, I wouldn't recommend this during Induction. And keep in mind that Dr. Atkins wanted desserts to be occasional, not every day treats.

No, not really. As others have said, you have to be careful not to have too much, because even though it is low carb it is also very calorie dense.

I use it in my eggs (1 TBS per egg) and in my oatmeal - just a splash.

we have to be mindful of the quantities is all!!! Another YMMV item. I use it in coffee, or tea, as a base for a chocolate low carb NY (i.e. eggless) egg cream. Never more than 2 level tablespoons a day, and usually less. Love & Profits: FLATFERENGHI
