Ice cream\Xanthan gum\Choco spread

i have xanthan gum and guar gum, I need recipe for really low calories ice cream, but really really low in calories and filling, i will be happy to get some.
also, in israel selling only walden-farms syrup, and not spread, i have the walden-farms chocolate syrup, i wonderd, how could i make from the syrup a spread?(without adding calories), i have guar gum and xanthan gum, and about the ice cream, i thought to take cottege cheese, with xanthan gum, and some choco syrup and blen all and freeze, what do you guys think about it?

I make fudgciles out of Lauren's Qucik and Dirty Chocolate Pie recipe, It's riccotta cheese, melted unsweetened chocolate, a little cream, some sweeteners, and vanilla. I blend it together in my Vitamix.
I also make a very low calorie, lowcarb ice cream using a little coconut milk. That recipe uses gelatin to stabilize it.

and guar gum cant work instead of gelatin? and cant use cottege insted riccogta?

cant do low in calories but maybe u meant low in carbs?

for ice cream take some frozen fruits eg strawberries and blend them with cream, add sweetener if u want, eat is straight away...
i prefer the fresh taste of the fruit so dont add sweeteners to it
