Tried and True Zucchini LC recipes?
 
I have already looked at zucchini recipes here, and have searched some out on the web.

I am looking for your "Tried and True" good recipes with Zucchini.....because it is looking like a bumper crop here this year. Between my 2 plants and what my dad planted, we are looking at more than 2 per day, from here on out........all thru the summer. :eek:

I am looking for everything from breakfast to supper, and snacks........

The only one I've tried that I saw on these forums was from Bobo I think. It is zucchini strips (i used a vegetable peeler), sauteed in butter, cook for about 5 minutes, then add a splash of half & half, parmesan cheese, and pepper. It was really tasty and couldn't really tell a difference between the zucchini and pasta.

I love it sliced and sauteed with a little butter, salt and pepper, and just a tiny pinch of nutmeg.

I'm looking forward to this thread. BF is a zucchini hater (although I doubt he's tasted it ever--he just has weird food dislikes) and I want to sneak it in and surprise him with something delicious. :) I'm so evil!

i do it in the ribbons too..but you can use any sauce (alfredo, marinara, garlic butter) and toss with protein and veggies... i also use it in cold pasta salad recipes in place of noodles. yum!

lol...my bf is too... then i made his some shrimp alfredo with the zoodles and he ate it up! told him it was zucchini and he said "can u make spaghetti next time." He's a zuch hater no more!

coarsely grate 2 small zucchini and let drain for a bit.
Saute for about 1 minutes in 1-2 Tbsp butter.
Stir in 2-3 Tbs sour cream and about 1/3 cup of grated montery jack/cheddar cheese
(Original recipe called for 2 oz of cream cheese too but I've found it's just as tasty without).

My favorite way to have zucchini is so simple. I cut it up lengthwise, brush it with olive oil on both sides, lay it out in single strips on a baking pan, sprinkle lemon pepper seasoning onto one side and then roast it on 350 degrees for about 20-30 minutes. (I like it when some of the edges are starting to crisp and the bottoms get a little brown. You can do it for longer or shorter, depending on your tastes). I had this last night. YUM!

Hey Karen:hiya:

Cut zucchini (or yellow squash) into thin rounds. Put it in a big Ziploc with a drizzle of olive oil, chopped fresh herbs like oregano or dry Italian herb mix & a sprinkle of salt and pepper. Shake it up to coat the squash. Lay the slices out on a lightly greased cookie sheet and top the slices with a bit of fresh grated Parmesan and bake @ 375 degrees for about 25 to 30 minutes or until it is as brown as you like. We like it browned and crunchy. It is good hot or cold.

Raw zucchini made into a salad with olive oil, lemon juice, and fresh dill is very summery. Throw some halved cherry tomatoes in there too if you want, and some thinly sliced onion.

Fry a couple of pieces of bacon until crispy; remove bacon from skillet. Chop some yellow onion and saute in the bacon grease, when it just begins to brown on the edges, throw in some sliced zuchinni and yellow squash (if you like) and saute till crispy-tender. Crumble bacon over and serve it with any meat or fish. Simple, but really good!

I make a zucchini lasagna at least three times per month, using slices of zucchini, that I saute first, then layer between seasoned ricotta mixture, mozarella and some meat sauce.

I have also made the following one as well (from LindaSue's site).
The only changes is that I don't do the food processor step (I like some consistency in mine.) I also add a sprinkle of nutmeg, which is a nice touch.

KAREN'S ZUCCHINI, SOUR CREAM AND JACK CHEESE BAKE
4 tablespoons butter, divided
1 cup onion, finely chopped, 4 ounces or 1 medium onion
1 clove garlic, minced
1 1/4 pounds zucchini, sliced 1/8" thick *
4 ounces Monterey Jack cheese, shredded, 1 cup
1 egg
1/2 cup sour cream
1 teaspoon salt, or to taste
1/2 teaspoon pepper
1 ounce freshly grated parmesan cheese, optional

Butter or spray a 6x8" baking dish or a 6-cup casserole dish. Melt 1 tablespoon of the butter in a large skillet over medium-low heat. Add the onion and garlic; sauté until the onion is soft and translucent. Transfer to a small bowl.

Melt the remaining butter over medium-low heat in the same skillet. Add the zucchini and cook, stirring frequently until the zucchini is tender. Turn the heat to high very briefly; cook and stir constantly until most of the liquid has evaporated.

Transfer to a food processor and pulse until smooth. Add all the remaining ingredients except the onions and parmesan cheese and pulse to combine. Add the onions and pulse just to combine. Pour into the baking dish. Sprinkle the parmesan cheese over the top, if using. Bake at 350° for 30 minutes or until golden brown on top and set in the middle.

Makes 4-6 servings
Can be frozen

* About 1 1/2 pounds before trimming or 4 medium zucchini.

Per 1/4 Recipe: 319 Calories; 28g Fat; 12g Protein; 8g Carbohydrate; 2g Dietary Fiber; 6g Net Carbs

My garden is producing a ton of zucchini too!! I love it!

Here's what I've done recently and my hubby and I loved it...I cut up several into medium thick rounds, and fill up my tupperware microwave vegetable steamer (could easily use a steamer bag or any other method of steaming). I steam it for 10 minutes in the microwave (it's a big bowl). Afterwards, I drain the liquid off, and put in chunks of Mexican Velveeta, cover for a minute or so while it's still hot, and then stir it all up. I know Velveeta is higher in carbs, but most of the cheese sauce goes to the bottom, and so you don't really eat as much cheese, but what's there gives it a delicious flavor. We really love it this way!

Low Carb Zucchini Hash Browns
 
Ingredients

1 cup grated zucchini
1 tbsp grated onion
2 eggs, beaten slightly
Salt, pepper, onion powder, (garlic powder for those who use it)
Directions


I heat oil in my big cast iron skillet.
Mix all ingredients together in medium sized bowl and drop by heaping tablespoons in hot oil.
When brown on 1 side, turn and cook the other side.
Stack on a plate and keep in warm oven 'till whole batch is done.
You can top these with sour cream, or butter, or smother in gravy.
Very low in carbs.

Zoodles are my favorite. If you look at Kevinpa's sticky in the recipe threads he has done a lot with zuchs including 'apple' pie. :)

I myself tried one last night

Sauteed small onion in 2 T butter.
Added 2 apples, sliced, with peel still on.
Added 1 sliced zucchini.
Cooked until done. Then sprinkled with brown sugar.

After all done, I added handful of pecans to mine, and it was excellent.

For lunch tried 1 box stuffing mix, put in covered casserole. Added 1/4 c butter and 1 chicken bouillion cube dissolved in 1 cup water. Stirred in 1 c shredded zucchini and baked for 1/2 hr at 350 degrees.

Entire family ate that one.

i definitely agree with either Zoodles or the zucchini hash browns or latkes. I didnt like zucchini myself until i tried these recipes and now i am hooked!

This is my favorite and easiest recipe when I'm in the mood for
an apple crisp.

4 medium zucchini
3 packages of Sugar Free Apple Cider Mix
1/2 tsp. cinnamon
2 Tbs. splenda
Water

Peel the zukes and cut them in half long-wise and take out the
seeds with a spoon..then chop up the zukes..like you would apple chunks. In a medium saucepan, empty the 3 packages of mix
and add about 1 cup of water to mix..add splenda and cinnamon
and then the zukes. Put enough water to just cover the
zukes and then cook over medium heat for 45 minutes until
the liquid is almost gone...but there is still some in the bottom
of the pan.

Pour zukes into sprayed small casserole dish.

Topping: 1/2 cup flax seed meal
2 Tbs. butter
1/4 cinnamon
1/4 cup walnuts
Splenda to taste

This is approximate..you can add more butter..whatever you want.

Mix this topping all up until it is crumbly. Then add to the zukes
in the casserole..Bake at 350 for 30 minutes..Serve with whipped
cream...

I slice them in rounds, lay them on a grill grate. Then, spray them with the different Ken's salad dressings and grill. HEAVENLY

I like to take small zucchini and slice them lengthwise, then blot with paper towels to absorb the moisture. Brush with evoo and top with either minced garlic or garlic powder, kosher salt, freshly ground pepper, and dried basil. Grill over medium heat until done the way you like it, turning once. (I don't like them to be mushy, so it's only about 5 min a side for me.) If desired, top with freshly grated parmesan before serving. Yum!
