Bacon & Cream Cheese stuffed sweet peppers

I don't know if this recipe is on here anywhere but I saw someones profile picture the other day and it looked like Jalapino's stuffed with cream cheese and wrapped in bacon.

So I thought I would go home and see what I could do.

I stopped at Costco and picked up a bag of Mini-Sweet Peppers, Pre-cooked Kirkland Bacon and Cream Cheese.

Sliced the Mini Peppers in halves and gutted the seeds. If you are using Jalapeno's, which I will likely do soon just could not find any you can soak in a little water after gutting to lesson the heat.

Filled each with a little cream cheese and then pulled a piece of bacon off just big enough to lay and press into the cream cheese.

Baked in toaster oven at 350 for about 20 minutes or until bacon got good and crispy and ate them up. They were awsome! I really, really mean awsome. You could wrap them completely in bacon but since I watch my calories somewhat it would mean that I could not eat as many. However, you could wrap and toothpick them. Next time I am going to throw them on the grill or if I have the smoker going I might try that.

Loveeee cream cheese stuffed peppers wrapped in bacon. We also mix some cooked Italian sausage in with the cream cheese. Grilling or smoking them seems to really take some of the bite out, or maybe it's just we clean them out really good?

These are great cold even when you need just a little snack and fat.

Great job on the weight loss, batlou! I look forward to reading your progress thread. Sooo much to read and not enough hrs.

I do my jalapeno poppers stuffed with half cream cheese, half shredded sharp cheddar or TJ's blend, and some garlic powder, and I use 1/2 slice bacon, wrapped around and secured with a toothpick, then I shake them in Parm cheese and bake on a nonstick foil lined baking pan at 400* til the bacon is crispy.

I buy those little peppers OP mentioned at Costco too and they're quite good. I can imagine that using them in this recipe would be great for those who don't like the heat of the jalapenos!

I just made some for lunch, but with pasilla chilis because it's all that I had. Pretty tasty!

Hah! Those are the ones...Yes, you absolutely inspired a thread.

I guessed on the ingredients, looks like jalapeno's instead of sweet peppers but I made them on a whim so did not feel like driving to another store to find them.

Yay! I feel so useful! Substitutions are great, IMO! They can lead to some new favorite recipes.

Yep, they're jalapenos. I've been thinking of making some with small sweet peppers for the kids. I made a big one today w/ a pasilla chili. YUM!
