Chicken salad recipe

I am domestically challenged, help! LOL! Anyone have a recipe for chicken salad? or curried chicken salad? I'm craving it sooo bad but don't know how to make it and don't want to buy the store bought from the deli.

All measurements are estimates, I tend to eyeball stuff... :blush:

Tam's curried chicken salad:

2-3 Boiled or baked skinless chicken breasts - cut into small chunks
Chopped celery and green onion (1/2 c total)
Toasted slivered almonds (if you're eating nuts)
Sliced grape tomatoes
Anything else from the veggie section that looks good.

1/2 c mayo or plain yogurt
Big squirt of lemon juice
Curry powder to taste

Mix up the Mayo/yogurt, lemon juice, and curry powder to taste. Toss everything in a big bowl and mix.

Mine - chicken, mayo, (sometimes celery), chopped green onions, garlic powder, onion powder, a little S&P, let it sit in the fridge for a few hours to get all yummy!

I love making it with rotisserie chicken - mmmmm

I shred the chicken and mix with half sour cream and half mayo (this is a trick a lot of restaurants/delis use for that ultra-lush flavor), chopped veggies like celery, scallion, bell peppers, cabbage, pea pods (note: I like it heavy on the veggies); then with salt, pepper, celery seed (critical IMHO), garlic powder, dried onion flakes. If you have the time, it's definately best after it rests in the fridge for a bit.

Chicken Salad


-2 cups cooked cubed chicken
-1/2 cup chopped green onion
-1/2 cup chopped celery
-1/2 cup chopped cooked bacon
-1/2 cup shredded pepperjack cheese
-1 cup mayo
- sunflower seeds(nuts)

Mix everything except nuts, pack tightly in covered bowl and let get happy in fridge for at least an hour. Throw a few nuts on when you serve(they get too soggy if you leave them in)

Rick - your recipe sounds great!

I make chicken salad a lot for my hubby. Chicken breasts cooked until done, mince while hot in my food processor. Add minced hard boiled eggs, sliced celery, dill pickle chips, salt, pepper to taste and lots of mayo (should come out creamy - not dry). He loves it.

I love this one. It's converted from my high carb days when it had pineapple chunks and raisins in it. It's still great.

Chicken Salad

2 tablespoons pineapple DaVinci syrup, optional
2/3 cup mayonnaise
1 tablespoon Dijon mustard
¾ teaspoon curry powder
1/8 teaspoon salt
4 cups cooked chicken, cooled
¼ cup celery, thinly sliced
2 tablespoons green onions, thinly sliced
1/3 cup slivered almonds, toasted

Combine 2 tablespoons pineapple DaVinci syrup (if using) with mayonnaise, mustard, curry powder, and salt. Set aside.

Cut chicken into small slivers and mix with remaining ingredients. Add mayonnaise (or flavored mayonnaise) and blend well.

Refrigerate 1 hour. Serve with lettuce and green grapes.

Chicken Pesto Salad

1/2 cup Costco Pesto (in the refrigerated section)
1/2 cup mayo
1/2 cup celery, chopped
1/2 cup walnuts, chopped
1/2 cup dried cranberries (these are high carb so I only put them in for company)
Rotisserie chicken, chopped (I don't know, maybe 1/2 of the chicken)
Combine everything except chicken and mix well. Add chicken and combine. Can eat as a side dish or toss with cold Shirataki Tofu noodles.

Sounds good. Sounds like a wonderful change up from the traditional.

the same way i make tuna salad

finely chopped (minced?)chicken, celery, onion or scallion, green pepper, plus enough hellmans to get it to cohere + an extra little dollop of hellmans to let me know it's there. no vinegar in this mix, however. that all. Love & Profits: FLATFERENGHI

I think this came from one of Dana Carpender's cookbooks....My favorite

CHICKEN SALAD

1-1/2 cups cooked chicken, diced
1 large celery rib, diced
1/2 green pepper, diced
1/4 medium red onion, diced
3 TBS mayonnaise (I use Hellmans)
3 TBS sour cream
1 tsp dill
salt

Combine chicken, celery, pepper and onion in a bowl. In a separate bowl, combine and mix mayonnaise, sour cream and dill. Pour over chicken and veggies. Toss and salt to taste.

2 servings
5g carbs
1g fiber
4g net carbs
24g protein
