Thanks so much for all the penny pinching Ideas! This place rocks. So little time and soooo much reading to do.

Whole pork lions were on sale for a buck fitty a lb. The loin was 8 lbs so I cut it in half and the one half was stuffed with grilled asparagus, mushrooms, red onions and provolone cheese. The outside was rubbed with roasted garlic & wrapped the outside in bacon. That went on the smoker with cherry wood until it hit 155. The inside stuffing was of stuff we had in the house but it turned out pretty darn tasty and there was enough slices to feed a small army. Froze half of it and had enough to eat on for about 5 days.

The other half got cut into thick chops and stuffed. Stuffing in the chops were, pepperoni, ham, provolone & Fresh basil leaves. The outside was just seasoned with S&P and drizzled with olive oil. These were grilled on the Weber grill to 145 degrees. We grilled them indirect (coals on one side of the grill) for about 20 mins and then finished them over direct heat for a minute or 2 on each side.. This stuffing combo was to die for! Again froze half and snacked on the remaining for a good 5 days..

Another thing we made along with the above was Johnsonville Hot sausage in the pound frozen tubes like the Jimmy Dean stuff. Those were on sale for 2 dollars at Woodmans. Defrosted them and rolled out the sausage and stuffed one with scrambled eggs, bacon, 4 small dollops of cream cheese and some colby jack shredded cheese. Then you roll it back up. Very good. The other one was stuffed with a good size banana pepper that was filled with garlic seasoned cream cheese and a good sprinkling of pepper jack cheese. This one was wrapped in bacon. Both were smoked to an internal temp of 160. The filling combo's are endless and again just used what we had on hand.

To roll them out we used parchment on bottom and saran wrap on top of the sausage and used a rolling pin to flatten it to about a 1/4-3/8" thick. Then remove the saran wrap and just start on one end of the parchment and roll it up. Worked pretty well although the second one the meat was a little warmer and it stuck a little more. After they are rolled up we put them in the freezer for about 30 mins to stiffen them back up.

I tried out the Fritatas recipe last night. I used Feta cheese and moz cheese. I add Turkey bacon and a small amount of yellow pepper. I was also able to make extra which is a great help for me. I put them in the freezer so all I have to is grab one out every morning. Easy is good for me. Cheap is also good too.

Southwestern Chicken veggie soup

For a easy, quick and cheap soup add any chicken you have on hand with a some chicken broth (canned is good, fresh/homemade is better), a couple cans/or bag of frozen mixed veggies, and about 1/2 cup of roasted salsa verde. Cook together for about 30 mins...chow down!
