Even though I joined this forum in 2009, I'm new to low carb so I still have that high carb taste bud memories. While some recipes might taste great to the veteran low-carber, I end up taking one bite and think, "This food makes me sad."

This cake recipe is NOT like that. After making this, I was in heaven. It's the kind of recipe that I can add to my "makes low-carb not just bearable, but enjoyable" list. It's a small list, but growing as I find recipes that aren't just tolerable.

Everytime I eat a small piece (that's all I need) of this cake and the sinful frosting, I wait for the sugar rush, because it is that good, like I'm cheating. Of course I don't get that rush. Awesome!

I couldn't get my sweetening blend (my own mixture of erythritol, xylitol and splenda. I haven't found a stevia product that doesn't have a terrible bitter after taste) as fine as it needed to be so I melted it with some butter, let it cool and then whipped it into crisco and the other ingredients for an excellent frosting--just like a bakery butter cream. It was perfect. I love this recipe.

I agree! This recipe is so good. I also like the cake with my German Chocolate Cake frosting. In fact I like the cake with a LOT of different toppings!

I miss Lauren. I hope she's doing OK!
