How's this for good!

My two teenage sons (14 & 16) both ate it and loved it. The older of the two, absolutely hates beans. He won't eat anything with beans (or onions)! The younger said I should make this every weekend. I sliced it into 6 healthy slices. I had one, DH had 3 and each of my sons had one.

12 lovely cupcakes!!

I made these with Eden Soy black soy beans and coconut oil. I mixed everything in my blender. They rose beautifully, and they taste good -- a deep chocolate taste and not too sweet (I cut back on the sweetener a bit). No frosting for me right now. Instead, I plan to eat them with a bit of coconut butter smeared on top!

What a nice recipe!!

Made this last night and couldn't wait to slice into it today. It looked like it was going to be dry, but it was moist and flavorful! I think I will cut back on the cocoa a bit. I didn't have liquid Stevia, so I used 4 packets of Stevia in the Raw and drops of EZsweetz to taste. I wonder if the Stevia in the Raw contributed to some of the bitterness?

All in all it is a winner and will satisfy my chocolate cake cravings! I don't think anyone would guess that it is made out of beans!! Can't wait to try the yellow cake version!

I use Truvia in the recipe as I can never get the proportions correct with stevia. I find stevia by it's self very bitter.

How much Truvia are you actually using in this cake and can I just use it without anything else for sweetening? Did someone say 35 pkgs ...how much is that out of the jar?

3/4 of a cup. Yes, that makes it pricey as I think there is roughly 1 1/2 cups in that container so this is 1/2 of a $6 container. But I measure out 3/4 of a cup.

Haven't made this in awhile, but it too is my favorite low carb cake! I tightened the hatch for a few weeks....going on the Low Carb Cruise in a week, but when we return, look out, I'm making CAKE!

Well, the cakes did flatten- it's not rounded like it was in the oven. They were barely done I think- could've used a couple more minutes and I think they would've stayed fluffier. I'm guessing they'll be a bit denser than typical cake but fluffier than brownie. Fine by me- I prefer brownie, haha.

I added a melted ChocoPerfection bar to the frosting. It pipes out great! I hand frosted the cake then piped stars around the bottom edge. Just the right amount of frosting and it tastes DIVINE.

Now to wait for the party! It's for my 11 year old son so I'm going to decorate the top with a faux-nachos theme. Pie crust triangles dusted with erythritol and cinnamom "chips", raisinets for meat, orange frosting for queso, and strawberry jelly for salsa. I won't eat any of that, of course.

I'll take a pic soon! The party is after supper... they're playing laser tag right now. <3
