I made a post about a 2 minute muffin and someone asked if the flax could be replaced with coconut flour. I wanted to try Lauren's recipe but the thought of using 10 eggs put me off a bit and I really wanted something I could make and microwave quickly. It took me 5 tries, all good and edible but a little crumbly. Finally the fifth try was perfect. Of course they didn't brown like Lauren's...they came out looking like a round of cheese but taste like a moist delicious pound cake. [/IMG]

Sorry, I was typing it, went to look at something and it disappeared. I'm also sorry the pictures are so big. I didn't know I had to re-size them. So here it is again.

sift together:
4 T coconut flour
1/2 t baking powder
pinch of salt

in seperate bowl cream together in order:
1 ounce of cream cheese
2T coconut oil
2T sugar substitute (I used 1T Zsweet 1T diabetisweet)
1T vanilla Davinci
2 T cream soured w/ lemon juice
1 T water
2 t vanilla
pinch of lemon zest

combine with dry ingredients, place in 6 inch microwavable bowl covered w/ plastic wrap, slit top to vent, microwave 3 minutes. Remove, take wrap off, let cool slightly before turning out on rack. I covered and place in the refrigerator over night as Lauren suggested. I made a cream cheese frosting for one and ate the other plain. It was very good both ways.

Oh wow, those pics look beautiful! Are there no eggs in this one?

I wonder what it would come out like in a waffle iron...

oh my gosh! I knew I'd forget something when retyping it. Yes it has 2 eggs, I will try and edit it. Thanks for catching that.

Wow am I a ding bat! I don't have an edit button for the recipe but I have one here so I'm putting it here I hope people see this before trying to make it, the 2 eggs are very important because one of my experiments only had 1 egg and it was to crumbly.

sift together:

swinglow, You won't believe how thick the batter is even with all those wet ingredients. I bet it would make great waffles. I might try it soon but I need to buy more Davinci first.

Thanks so much for sharing this one. I just got a waffle maker so I think I'm trying to put every mixture I see into it :blush: but I would just LOVE a waffle that tasted like pound cake . I'll let you know when I do it!

mmmm maybe make thin the cream cheese icing with davinci's and drizzle it on top for syrup... oh my!

I love strawberries, I'd slice a couple berries and top the waffles with whip cream. I think it would be like a Belgium waffle and it is sweet enough you really won't need syrup.

I ate a chunk of the unfrosted cake this morning. For dessert tonight I split the other chunk in half, used 2 strawberries and a few blueberries, sugar free whip cream
