You can make jerky from flank steak, or other lean cuts - what I used to use was eye of the round. Freeze it until it's firm but not frozen, then slice thinly, marinate overnight, dehydrate. I can give you my marinade recipe if you like, if I haven't already posted it in this thread, which I may have!

You can also use the ground beef, roll it out between two sheets of plastic wrap - there are methods for doing it online, just run an internet search for ground beef jerky and you'll find them. I have not done them that way, just with the LEM jerky cannon I bought recently, which worked really well. I probably won't make jerky from anything else from now on - it's easier on DH's teeth and jaw too.

Would you please post your marinade recipe? I've had a pound of beef pectoral meat that was cut up by a local butcher who makes and sell a lot of jerky. But, I do like the idea of using ground beef. Can't wait to get started.
