Fresh Strawberry Pie

This is the ultimate strawberry lovers' dessert.

Crust:

1/4 cup of flax seed meal
3/4-1cup of almond flour
1/2 stick of butter/lard, cut up.
2 Tbs. of splenda
dash of water (last minute)

This is a ballpark recipe for a crust that you pre-bake at 350 for around 15 minutes for this pie. Mix all the ingredients with a large fork and then cut in butter or lard til like cornmeal. Then add a Tbs. or 2 of water to make it slightly moist.

Spray a pie pan and pour the ingredients in the middle of the pan and just
press this into the pie pan on the bottom and up the sides. Use an 8 or 9 inch pie pan.

Bake at 350 for 15 minutes until cooked..

Let cool..

Add halved fresh strawberries until they are piled high into the crust.

Then: 1/2 package of strawberry koolaid package..(not sweetened)
1 unflavored gelatin envelope
1/2 cup of cold water
1/2 cup of boiling water
Sweetener to taste..1/2 cup (ballpark)

In a 2 cup measuring cup add the cold water. Pour the gelatin over the top and let it set..stirring a couple of times. Then add the 1/2 pack of strawberry koolaid, stirring well..Add the boiling water and stir, then the sweetener to taste. After you feel the gelatin has dissolved..Let the mixture cool a bit and then pour it over the fresh strawberries in the pie shell..

Cover and refrigerate for 4 hours or until it sets up......Serve with whipped cream....... It is very nommie..and you don't have to use the Equal sweetened jello.

This looks good, Carolyn. I have an old recipe that uses strawberry Jello (you know - that evil Equal) that was very good. The sweetener probably depends on how sweet the berries are. And the sweetest ones are coming soon!

Pam..This is even better because there is less "filling" and more strawberries. I would
use at least a quart or so of strawberries..

You could make it without the crust, too, I'm sure..

It is very good..Our strawberries aren't that good yet..Maybe in another couple of weeks they will be better.
