Coconut Milk Jello

I saw this on a parenting board I frequent and thought I'd share it here (definately going to try this soon!):

coconut milk jello:

1 packet gelatin, dissolved in 1/4 cup boiling water
1 cup coconut milk
2 drops liquid stevia

Stir all, set in glass pan and chill. That's it.

Why didn't I think of this? I grew up in Hawaii and they make this all the time there- it's called haupia. The original is full of sugar.

It's very "ono".....=good

I've never heard of it before and thought it was great! I like the almond breeze idea too. There are so many possibilities!

Ok.....I tried this today....with a couple modifications...

I used 2 boxes of SF orange jello....
1 shot of Davinci SF syrup (coconut flavored)
1/2 c. of boiling water
1 can of lite coconut milk.

This was awesome!!!! great desert and very filling for jello.

Good idea to switch the jello thing up.

I don't think in the original recipe it was suppose to be flavored.....but I started thinking pina colada....then different flavors, so my tweak was to try the SF flavored jello and see what happened. The results were

Could you use granular splenda in this instead of the liquid Stevia? And anyone know how much you'd use?

Yes, you could substitute granular Splenda. But the carb count would be way higher (24 carbs per cup). Do you have liquid splenda? It's 0 carbs.
