Bacardi Rum Cake

I am sure this has been discussed here before, but I just don't remember it. Does anyone have a low carb version of the Classic Bacardi Rum Cake. That was always a favorite of mine back in my high carb days. I would think that a low carb version could be concocted by one of these great cooks here on this board. Any ideas anyone ???

If you'll use the search function and type in "rum cake" you'll find a thread called "Pecan rum cake". Maybe it's what you are looking for.

I think this is the original recipe for it:

BACARDI RUM CAKE

1 c. chopped pecans or walnuts
1 (18 1/2 oz.) pkg. yellow cake mix
1 (3 3/4 oz.) pkg. instant vanilla pudding
4 eggs
1/2 c. cold water
1/2 c. oil
1/2 c. Bacardi dark rum (80 proof)

Preheat oven to 325 degrees. Grease and flour 10 inch tube pan or 12 cup Bundt cake pan. Sprinkle nuts over bottom of pan. Mix all ingredients together and pour over nuts. Bake 1 hour. Cool. Invert on serving plate. Prick top. Drizzle smooth glaze evenly over top and sides. Allow cake to absorb glaze. Repeat until all glaze is used.

GLAZE:

1/4 lb. butter
1/4 c. water
1 c. granulated sugar
1/2 c. Bacardi dark rum

Melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.

Niki,

That's the recipe I use except I use instant french vanilla pudding and clear rum. I have never tried the dark rum. If this get's low carbed, I will be one happy woman!!! Hands down my favorite cake! But i am growing very attached to Linda Sue's pound cake!

Ps. I have Lauren's bananna muffins in the oven right now and I plan to make her molten cake for dessert tonight! Who would have ever thought low carb would have so many, many tasty treats!

Here's a Rum Sauce recipe by Rosethornes from this website. Iv'e not tried it.

1 c. davinci vanilla syrup
1 stick of butter
1/2 c. rum

Put syrup and butter in sauce pan and heat to melt butter , take off stove and pour in rum.

I used the spice bundt cake and poked holes in it and poured the rum sauce all over it .

I think we are on to something here !! I knew all the great cooks here could suggest a way to get to a low carb version. I see a low carb Bacardi Rum Cake in our futures.
