Question....I have almond flour but not coconut flour. Is there any reason for the mixing of the two? Or would it work with all almond flour?

Marvin, IMHO you really need the coconut flour. Not a lot, but I double the recipe and end up using about 1/4 C. The coconut flour is almost like a sponge and soaks up the egg, making it more bread like than just the almond flour. I would try it with just the almond flour and see what you think, but I'm afraid it would be too brittle/crumbly?

Just a little coconut flour makes a HUGE difference, in my opinion!

I had the same question about the coconut flour. I have the almond flour, can't find the coconut locally and am kind of in a bind about buying it online (money, DH works for Chrysler). How does anyone think carbalose would work in place of the coconut flour. All this stuff is so expensive and I don't want to ruin it. Also, I looked at yeast and it only has 2 carbs per .25 oz package, does anyone know if that would work in this recipe? Or on Atkins is yeast completely off limits. I've been on Atkins 2 years and lost and kept off 41 pounds.

I've never used Carbalose. My experiences with Carbquick have been mixed.

You could always whirl some unsweetened dry coconut (readily available in natural food section of grocery store) in the food processor or coffee grinder for your coconut flour, if you aren't ready to buy a big bag of the stuff just yet (I've had mine in the freezer for two years now).

I made the cauliflower pizza crust tonight and it was a great big ol' FAIL.
Tastes like cauliflower, stuck to the pan, ended up with a pile of cheesy eggy cauli and pepperoni. It wasn't BAD but it wasn't pizza. Yours sounds like PIZZA!

I made this over the week-end & doubled the recipe (used 4 eggs). It is really, really good. The middle of my crust stuck to the pan, even though I had coated the pan with olive oil.

I use parchment paper on a ventilated, metal pizza cooking tray. I think I bought it from Williams-Sonoma or Sur la Table. It has tiny holes that ensure a crispy crust.

I also use the parchment paper or the non stick foil on a regular cookie sheet or jelly roll pan. I also double the recipe and use 4 eggs.

Take this with a grain of salt, because pizza was never one of my must-haves even when not on LC. But I tried this and I had to use ground unsweetened coconut due to lack of coconut flour. The texture was all right, but the coconut taste was strong, and when combined with the smoked mozzarella I was using, overall made me pretty queasy. Maybe the coconut taste isn't as bad with real coconut flour.

Coconut flour does not taste as much like coconut as ground coconut. I don't think you can sub them measure for measure and get the same results.
