I'm going to plug this again, only because I love them so much and you could use your walnuts, peanut butter, and coconut oil in them.

http://www.lowcarbfriends.com/bbs/lo...e-topping.html

Some recipes here Low Carb Diets at About.com - Atkins South Beach and More Low Carb Diets use soy milk. Look on Food Network for some George Stella recipes, he uses soy flour for lots of things.

You could use the soy flour to make George Stella's pizza crust. You can google for the recipe--sorry I don't have it with me right now. There are also a lot of things made with soy flour and you can use soy milk wherever you would use regular milk.
Coconut oil is great for so many things, esp. for frying up some chicken.

You might want to research a bit more before buying stuff you don't know how to use. I personally don't like soy. Soy powder, soy flour, anything soy. It tastes yucky!! I had to throw most of the stuff away that I used it in. I know that George Stella likes it in his recipes and even Atkins called for it in his recipes. My hubby likes soy milk and we have it in the house but I don't drink it. It is really bad for you healthwise if you have any kind of thyroid trouble. I don't have a thyroid problem but still try to steer clear!!

Hi Jamie...
One of the mistakes we made as newbies was to buy things which were mentioned without first targetting some specific recipes of things we liked and then shopping to fit them.

Sounds like you may have done that - which is ok, and you will live. I'm glad you are pursuing a healthier way of eating/living, and there are some awesome recipes here...

For a basic list of 'what to keep on hand' ingredients, you might want to watch for (or even start a thread for) what's always in folk's cupboards who eat this way long-term. There was one not too long ago, and there are a basic list of ingredients that many of us keep on hand.

Keep us posted and persist!!
