I made a batch of these yesterday. I got 9 muffins out of the recipe. I forgot how good these were! I was out of walnuts so used slivered almonds instead. Delish!

Just a tip for bananas, if you get a banana that is overly ripe and can't use it right away, you can toss it into the freezer (yes, peel and all). I have one now blackened in the freezer.

Not that I see this recipe popping up again, will buy a really ripe one from the grocery store, wait for it to get blackened, thaw the other one and make these. I look forward to muffins with eggs on a Sunday morning, special treat and then keep the other muffins frozen. Too tempting to gobble down as they too are a weakness of mine.

Ok made these today. Followed recipe to the letter and ................
AWESOME. They are really good. I think next time I will add a few carbo chips.
