Well I made my caramel for the eggs and it's cooling now, although I burned it.
I just need to make sure I have the texture right and then I'll share the recipe!

I live in the mid-west and found them at Hy Vee. That is the only place I have ever seen them. They work perfect for turtles. You might be able to order them from their website.

I did try this adding maple flavor instead of vanilla. Not a Cadbury egg, but delicious!

Okay here's my caramel egg recipe. I don't have pictures for you so sorry. I hope someone will try this and report back.

2 tbsp Polydextrose
1 tbsp sugar alcohol (I used erythritol)
1 tbsp water
2 tbsp very cold butter
1 tbsp very cold HWC
1/4 tsp vanilla
stevia to taste

1. Add first 3 ingredients to a sauce pan over high heat. Stir until everything looks melted and uniform.
2. Boil this on high until it turns a tan color then reduce the heat to medium and have cream and butter ready.
3. Immediately when you see or smell smoke, add cream, butter, and remove pan from heat.
4. Pour into a glass container such as a measuring cup and let cool until it is safe to taste. Add stevia until it tastes good and stick in freezer until firm.
5. Remove from freezer and shape into balls. It'll make 3-4 depending on how big you like them. Cover in your favorite chocolate and return eggs to freezer. Enjoy!

Makes 4 eggs @ ~1 carb per egg.
Counts are for filling only, not chocolate coating.

Once again make sure you don't let this smoke too long. I did and it doesn't taste very good haha
