Chinese chicken salad

I made this for dinner last night and forgot how much I loved it!!
I thought I would miss the crunchy noodles, but with a bit of crispy
chicken skin and chopped toasted peanuts on top, I didn't AT ALL.
I made my salad with shredded cabbage, iceberg lettuce and lots
of cilantro and some green onion. The super easy dressing was a
mix of 2 tb mayo, 2 tb peanut oil, 2tb soy sauce, 1 tb splenda, 1 tb(or more)
rice vinegar, 1 tb lemon juice and 2 tsp sesame oil. I also added
toasted sesame seeds. For the chicken I roasted a couple of
thighs drizzled with soy sauce, then cooled and shredded.

Just piled it all in a bowl and tossed with the dressing and sprinkled the
nuts and skin on top.
This one is going into my regular rotation because it was easy, tasty, and
cheap!! Plus, I love a one dish meal.

Snaggle: you said your salad was "easy, tasty and cheap" - It also sounds like it would be very healthy. I'm definitely making this. Do you think crispy crumbled bacon would make a good topper?

Sounds awfully good to me, since I keep roasted, picked chicken quarters in the freezer all the time, it would super quick and easy for me.

Bacon??? Well I am always big on adding bacon and do believe in the theory that it improves most anything, but in this case I feel it might take away from the chicken-y-ness?? But I may be wrong. Try it and let us know. I assume you mean as a sub. for the chicken skin, which reminds me, I need to work on a technique for keeping the chicken skin crispy in this recipe. Some of the pieces just got leathery
