Canned salmon or mackerel

What do you guys do with these?? I mean...how do you prepare them?

I just added mayo to the salmon and onion. It was good.

Not sure about this canned mackerel. HMMM
*Never ate this before.heheh

I know nothing about mackerel, so I'm excited to see what people do with it!

As for canned salmon, I like adding it to a green salad with ranch dressing. Yum! (The first time I did this I dumped the drained salmon on top of a side salad from Outback to make it a lunch - OMG, that was AWESOME.)

I fix salmon and mackerel the same way. I just add onions, a couple of eggs, some crushed pork rinds, cajun or old bay seasoning, mix it all up and fry it in the skillet in patties.

I am from the caribbean where canned mackerel is a staple. Saute some onions,sweet peppers and garlic then add mackerel and let simmer for a few minutes; pot should be covered with a lid while simmering. If you truly want to kick it up a notch then add some carb one ketchup to the concoction.
This is pretty good;you should try it.

One thing I forgot to mention, I like to saute the veges in butter. However, I guess you could use a good fat of your choiice.

I made a quiche the other night with onions, a can of wild salmon and swiss cheese. It was awesome. Another idea is to make a salmon loaf, lots of recipes come up if you google it just find replacements for bread crumbs.

wow linda..Fry up the mackerel in patties just like salmon patties???

WOW> Ill have to try this. I do that with salmon and I know its gooooood. I used to put it on my George Foreman and really grill them good and crunchy!

I love mackerel It's usually less expensive than salmon and has many of the same benefits(cold water, fatty fish).
I use it exactly the same way as salmon, just out of the can with salad or mixed with sour cream (not mayo) for a quick mackerel salad.
It does have a stronger flavor than salmon I find, but not in a bad way.

This is my high carb recipe for Salmon patties...

I put a can of white beans in the food processor and whip them until smooth to use in place of the mashed potatoes. I've also used leftover loaded cauliflower before...I liked the beans the best.

I used almond flour in place of the cracker crumbs and a mixture of almond flour and parm cheese to fry them in.

My family says the low carb version is better than the high carb one.

Salmon Patties

1 can Red Salmon
1 egg
1/2 cup mashed potatoes
1 stack of crackers crushed into crumbs
Cornmeal

Make the mashed potatoes and crush the crackers into crumbs.

Drain the juice from the salmon and place the salmon in a bowl.
Mash the salmon with a fork until it is all lose and separated.

Mix in the egg and the mashed potatoes.
Thicken with enough cracker crumbs so that it will hold together when you shape them into patties.

Form the patties and coat them with cornmeal, place in refrigerator until ready to cook. Fry on med. heat in a little oil until golden brown. Drain on paper towels.

I just made salmon patties last night - sooooo good! I use the recipe I use for crab cakes, gives them nice flavor.

Michelle - Ahhh, the pizza! It's so, so good and low carb.

For the salmon patties/crab cakes I use the following:

1 egg
3 Tbsp. mayo
1 tsp. Old Bay seasoning
1 Tbsp. Worchestershire sauce
1 tsp. dry mustard
1 to 2 tsp. lemon juice
2 tsp. yellow mustard
chopped parsley
A dash or two of hot sauce, to taste.
Mix together then add the salmon or crab; then add 1/2 cup to 1 cup of lc bread crumbs, parm cheese or pork rinds. Shape, chill then fry in hot butter.

Thanx so much for that salmon recipe. Im making it right now. I have all the ingredients except the lemon.

Im now chilling the patties in the fridge.
