Substitute for Ramen Noodles

HI ... I'm a LONG time lurking but first time poster. I have a favorite salad - the NAPA Salad:

1 large head Napa cabbage
2 pkg. Ramen noodles
2 bunches green onions
2 pkg. Slivered almonds
3 Tbsp. Butter
Dressing
2 Tbsp. Soy Sauce
˝ cup red wine vinegar (or balsamic)
˝ cup oil
1/3 cup sugar (I use Splenda)

Break up Ramen noodles. Saute noodles and almonds in butter in a large skillet until browned. Put almonds and noodles in a bowl in the refrigerator. Slice cabbage, chop onions, and mix together in a large salad bowl. Combine dressing ingredients and mix well. Right before serving, toss cabbage, noodles, and dressing together.

I was wondering if anyone knew of a substitute for the Ramen noodles. I guess I could just double the almonds but was hoping for some ideas for substitutions.

Personally, I would just leave the noodles out (too much starch). I've made this without them and it is still great. I've never made it with a whole head of cabbage at one time though; that would be huge. I've added shredded chedder cheese. Great salad!

I've been pleased with how noodly a sheet of nori (seaweed sushi wrapper) will get when I snip it into slices and add it to a fishy salad (in olive oil). This is a sea vegie that stores easily (and is forever at the ready) and snips nicely to give a moist green noodle that might work out well in this Napa cabbage salad.

Zer, can you brown it so it's crispy? The Ramen stay hard and get crispy browned. Where do you buy it from?

Yep, toasting the paper-thin sheets of nori (seaweed) makes it crispy to crumble on a salad. I got my nori online in 2003 at Tucson Co Warehouse. Yes, 2003. Still tasty. See the seaweed thread (all kinds) here.

You can find nori at many supermarkets. By far the best price is at a local Asian market.
