Mine was baked almost an hour per the instructions. It was very brown and I think it is way too dry. The whipped cream was good on it. The taste was good, but too dry.

I froze the muffins on a cookie sheet and put them in a ziplock bag.

Mac thanks for all the info for ****** appreciate that alot. Your son looks soo angelic.

Think I might like to sweeten it with coconut davinci wander what this extra liquid would do to the texture anyone ever try it?

I made this twice-- The first time with 2 cups of cream and the second time with 1 cup cream and 1 cup coconut milk. The first one was by far the best. Very creamy and smooth! I use a blend of Stevia and Erythritol to sweeten it.

I made the blender pie last night. I used coconut milk (the thick stuff that is all creamy with some watery stuff, one 398ml can with enough water to make 2 cups). Oh my GOODNESS! I think I have a new favorite dessert. It is now gone. I ate most of it . It is something I am either going to have to save for special occasions or make small portions and freeze because it's TOO!!! good!!!

(eta: I didn't add the flavoring since I used the milk and I used a few packets of splenda and a little stevia. It wasn't overly sweet, just enough)

Just put it in the oven. Used all vanilla as had no coconut on hand. Subbed 1/2 xylitol and 1/2 splenda cuz I don't like the aftertaste of too much splenda in a sweet recipe. The tsp left in the blender tasted yummo. Here's to some pie tomorrow nite!

I made this with half the coconut milk and half the cream. It was just soso. I will try again with all cream. My kids passed and I ended up tossing it. Maybe this time it will get ate like my cheesecake does.Or maybe I will eat it warmed in the microwave, what was I thinking.

Made this this afternoon, using coconut milk instead of heavy cream, and lorann's coconut oil flavoring instead of extracts (was out of vanilla), and added 2 TB granular E. Very coconut'y smelling.

Still cooling on sideboard but smells great. Looks like a custard more than a cream pie.

I've been in several stores the past few days and cannot find "unsweetened" coconut. Is it some kind of novelty item?

You can find it in the frozen food section near the frozen fruit and cool whip. I have found an organic unsweetened coconut in the organic section.HTH

Natural food stores carry it and also, as Go said, in organic sections of the local food chain here but it's way more expensive that way. At the natural food store I think I paid 2.75 for a bag of it, same size as regular sweetened coconut. I keep in freezer.

I think splenda by itself IS too bitter, especially if you're like me and tend to like things sweeter. I use splenda quick packs and Erythritol in most recipes.

I get my unsweetened coconut in a market that caters to Indians. Among all the fragrant spices and unusual flours, they have unsweetened coconut (cheap) in powered, shredded, and chipped form.

Read the label carefully. The frozen coconut that I've seen near the frozen fruit is always sweetened. I get Kroger's unsweetened coconut in the baking aisle at Kroger. They also have another brand in the health food section of the store or at least they used to.

lol, just about a year since I last posted in this thread looking for it again. I want to make a low carb coconut cream pie ice cream and thought this would be good for the add in. Hoping it works! I can remember how amazing it was to just eat and may make one to freeze in serving sizes so I can practice portion control!

I made a 1/2 recipe and the mini pies are in the oven. I tasted the "batter" and it tasted like coconut cream pie (I made exactly per instructions with HWC and extract) I don't know if I will be able to wait overnight to eat it....

Can I use fresh coconut for this instead of unsweetened? We don't really have packaged coconut. Is it dry like dessicated coconut? I've been wanting to try this recipe for a long time but I don't know which to use. Thanks.
