Does anyone have a Suzie-Q LC filling recipe?
Hello.... I'm making BettyR's Mayonnaise cake and would like some type of white creamy filling.... think Suzie-Q's.... I've got a new pan to put a cream in the middle of the cake... and would love a Suzie-Q type filling. Thanks.

This is the recipe Soo's talking about. It's very good, might work as a Suzy-Q, not quite the same taste but it's got that crispy texture, queen.
LC No Refrigeration Whipped Cream Icing (Kevinpa's recipe)
1/2 cup heavy cream
1 1/2 T. Carbalose (level)
pinch salt (1 quick twist on a grinder)
Put in a medium non-stick sauce pan stiring constantly over medium heat until thick. Cool in refridgerator.
In another bowl
1/4 cup powdered erythritol
1/4 cup polyD
1 cup equivilent splenda (1/4 t. sweetzfree)
1 T. ThickenThin not/Sugar
1/4 cup butter
1/4 cup crisco green
1 t. vanilla
Beat until fluffy.
Add cooled flour mixture.
Beat until creamy
Makes between 1 1/2 to 2 cups creamy icing.
10 total carbs
Can be refridgerated but does not need it.
Note: Can be doubled.

I went to copycat recipes to see if they had the original and I didn't find it. I thought we might be able to lowcarb it. If it is there, someone that knows how to manipulate the site better than I should look for you. sorry!

I'm not exactly certain what a SuzieQ filling would be like, either, but recipezaar.com has this copycat twinkie filling that might work. I would use one of the lc marshmallow creme recipes (I think there are at least 2 versions that I've seen here on LCF), then I'd replace the powdered sugar with powdered E, and add Splenda to make up the rest of the sweetness.

SERVES 12 , 1 1/2 cups
2 teaspoons very hot water
1/4 teaspoon salt
2 cups marshmallow creme (or 7 oz. jar)
1/2 cup shortening
1/3 cup powdered sugar
1/2 teaspoon vanilla
In small bowl, combine salt in hot water and set aside to cool. With electric mixer, beat remaining ingredients until fluffy. Add salt solution and combine.
Ideas for uses:.
Prepare a yellow cake mix with pineapple juice substituted for water component. Inject this filling into cupcakes made this way or a layer cake sliced horizontally.
