Roasted Chicken with Zoodles (Mushrooms, Cream, Zucchini strips, and Parmesan). AWESOME!



Scotch Egg with Tomatoes and Guacamole.



Banana Split Cake. Just 4.9 carbs per slice. Great for the whole family!

Chunky Beef Chili topped with Cheese.



There are lots of good chili recipes on here, but here's a little trick I like.
When you're cooking your beef, pinch it off in big chunks before cooking.
You will definitely enjoy the large meaty chunks and flavor in every bite!



Breaded Cheese Sticks with Marinara Sauce. Just 2 carbs when prepared with Queso
Blanco cheese, 1/2 slice of Trader Joes Sprouted Wheat Bread and your favorite spices



Fruit Pizza. YUMMY!!! Even your kids can help you decorate this one.
Just 5 carbs per slice, and definitely worth it!

Can you believe all this goodness is just 5 carbs!



Fresh Tomatoes and Grilled Hamburger topped with A1.



Stuffed Peppers! Just use your favorite recipe and substitute the starch with
a slice or two of your favorite low carb bread, or a couple tablespoons of oats.



Also try it served with sauteed green beans sprinkled with parmesan, and a chocolate
chip almond cookie.

If you're not on Induction, don't be afraid to have one slice of bread with your
breakfast in the morning. This one has just 4 net carbs, and is very very very tasty.



You can see from the label, just 4 net carbs, as well as additional health benefits
from the sprouting process. I found this one at Trader Joes.



Chicken wings are a great make ahead snack. Cook up a batch on Sunday, and
enjoy them all week long. Dip in your favorite ranch or blue cheese dressing
which are usually very low carb too.

Broiled Skillet Pizza. You will probably want one of these EVERY SINGLE DAY
when you see how easy and tasty this is. What makes this a little different than
some of the other pizzas on here, is that it gets broiled on high, which cooks every
ingredient perfectly, and crisps the pepperoni up nicely!

Here is the entire recipe: 1) Start with an 8" oven safe skillet. 2) Add in this order,
3 Tablespoons sauce, 2 ounces shredded Mozzarella, and your favorite toppings.
3) Broil on top rack on high for 5 minutes, or until pepperoni crisps to your liking.

How easy was that????



Let cool for about 2 minutes, and this will slide right of the pan.



Here is one with fresh tomatoes. I have actually gotten 3 of these pans under
the broiler at once, which makes it easy to let each of your family members
enjoy their own favorite toppings.



Who doesn't LOVE a good steak! Throw some cheese on that Broccoli if you like,
cuz it's totally legal on low carb.........aint it great!!!

Don't forget to eat your greens Here is a salad my wife really likes with

Oh my, I had just looked at some of your pictures on another thread a couple days go. Looks so yummie. I want chili and the pizza. I always thought pizza crust was overrated anyways- the toppings look so good.

WOW! Bobo I your recipes! I made the Banana Split Cake for Thanksgiving and it was delicious. The entire family raved about it and said for Christmas there better be another. Lauren's Simple Cocoa Brownies are INSANELY GOOD. I MASSACRED them... I tweaked the recipe for the stuff I had on hand (example, I used 1/2 cup of calorie countdown milk instead of heavy cream.. saves calories too)... I'd prolly use coconut oil next time instead of butter just for the 'benefits'. SOOOOOOOOOOOO GOOD. An AWESOME sittin by the Christmas tree 'snack'...
Simple Cocoa Brownies


Yields 10-12 brownies

Ingredients:
1/2 cup organic unsalted butter (1 stick)
1/2 cup unsweetened cocoa
1/2 cup erythritol or 1/4 cup plus 2 tablespoons xylitol
1/4 teaspoon good-tasting pure stevia extract (NuNaturals)
2 large organic eggs
1/4 cup organic heavy cream
1 tsp pure vanilla extract
1/8 teaspoon sea salt
1/4 cup almond flour
1/4 cup oat flour
1/4-1/2 cup chopped nuts

Preparation:
Preheat oven to 350 degrees Fahrenheit. Melt butter and cocoa together and stir until smooth. Whisk in eggs and erythritol. Pour cream in, whisking for a minute or two to dissolve all of the erythritol. Add in remaining ingredients, reserving nuts to stir in last. Pour batter into silicone muffins cups or an 8 by 8 inch pan lined with parchment or greased aluminum foil. Bake for 20 minutes, or until a toothpick comes out clean.

Swifty1014 & wenig..............Here is how you make the Zoodles.
You will not believe how TASTY these are!!! Mushrooms, Heavy Cream,
Parmesan Cheese, Zucchini, what's not to like???

The dish is nicknamed "Zoodles", like maybe the Zucchini is a
substitute for real noodles, but this dish is not a substitute for anything!!!

It is an EXTREMELY tasty stand alone side dish that I would make
even if I wasn't low carbing!

By the way, this is not my creation. I think there are some threads
on here about these.

This was a really big batch, that would probably feed about 6 people.
We started with 3 Zucchinis, and a large container of Mushrooms (12oz I think).


Just slice the Zucchini with a vegetable peeler. Throw away the very first
strip, and then work your way around the vegetable leaving on just enough
green for color.



Cook the mushrooms down, and make sure all of the water is evaporated.



Add about 1 1/2 Tablespoons Butter, 1/3 Cup Cream, and 1/2 Cup Parmesan.



Simmer to thicken. Add salt and pepper.



Stir in Zucchini. The Zucchini goes in last because it doesn't need to cook very long.



Simmer until thick.



Top with Parmesan. Enjoy.

when we are at a loss for ideas, or feeling like a cheat





annabird.............YES, I enjoy every single one of these foods on
a regular basis. I have lost 62 pounds since September, the first
32 pounds in 6 weeks was from this menu! The last 6 weeks and
30 pounds has been from a different, more restrictive plan, which I
will be done with in a few days.
