Bobo, those tomatoes look amazing. My mouth waters just looking at them. Those zoodles look great as well. Will be making those soon ! I bet the dish would be good just using the mushrooms by themselves and adding some onion and garlic. I love mushrooms !

BoBo, thanks for all the pics. The food looks fantastic !!! Who wouldn't want to eat low carb. Over the past several years, with this website and all of the contributers from low carb sites, I have seen so many new receipes than from say 7-8 years ago. I have enjoyed making so many receipes from here. You ladies and gents are awesome !!!!!!

fawn............I can't believe how many questions I get about that
countertop...lol. It's a river rock based form of granite called
"Rhodium Bahia", from Brazil. The red isn't for everbody, for sure,

White Bean Recipe?

Hello! I'm new to this message board but been on adkins since April. I saw a recipe that included white beans and horseradish...I know I didn't dream it but I've looked everywhere and can't find it...anyone know what I'm talking about? It was a type of sweet monkey bread. Am I crazy?

Chocolate P-nut Butter Cookies

1 cup sugar free peanut butter
1 cup brown sugar substitute (I use Whey Low Gold)
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
8 oz sugar free semi sweet or dark chocolate chopped

Preheat oven to 350. Prepare cookie sheets by lining with parchment paper. If not using parchment paper, do not treat or grease the pans.

Combine all ingredients except chocolate and mix until smooth. Then stir in the chocolate.

Drop by spoonfuls onto prepared cookie sheets about 2 inches apart.

Bake until puffy - they will be lightly golden and still soft - about 10 minutes.

Yields 1 dozen cookies.

Enjoy!

I am glad to see that you are using the Whey Low Gold. Most people on the various LC boards don't seem to think it is something which should be used although a small number do use it and like it. I use it as well as the other Whey Low products and my blood sugar readings are not impacted. Just my opinion.

Sorry, just saw this post. I don't know how I missed it.

Kimlou posted the recipe I used.

I made the following tweaks:

I don't have WheyLow and Diabetisweet does NOT agree with me. I used a mixture of liquid splenda, erythritol, and 1 tbs blackstrap molasses (the molasses adds 1 carb per cookie). I also used George Stella's chocolate chip recipe:

Chocolate Chips:
1-ounce unsweetened chocolate, chopped (I used 2 oz)
1/2 cup sugar substitute (recommended: Splenda)-again I used mixture of liquid splenda and erythritol
1 tablespoon hot water
1 tablespoon heavy cream
I also added 1 tsp vanilla

Place the unsweetened chocolate in a heatproof bowl and melt over a saucepan of simmering water. Whisk in sugar substitute and thin with the hot water and heavy cream. Whisk to blend thoroughly. Remove from heat, spread on a plate, and place in the freezer for about 10 minutes. Cut into small chunks after chilling. (I used a silicone bread pan and the chocolate pops right out).

These were yummy and my DH even liked them and he rarely likes any of my LC baked goods.

I love Gedney Zinger Dill Babies dipped in plain cream cheese. I am sure someone could come up with a better dip, but just like this is terrific!!!

Mine was bitter too. I got it at the Indian market, but I finally ended up throwing it away. I tried making my own. Although it was not bitter that way, even my trusty Vitamix could not make it completely smooth.
